How to make Kalan (Onam Recipe) | Kalan Recipe

Kalan is a yogurt and coconut based curry.It is usually made with yam and raw banana and is a must have in the Onam Menu List.

I made Kalan with yam a day before as it tastes better after a few hours.

Will post pics of the Onam Lunch in my next post.

For now Wish you all a Wonderful Onam.


 For Kalan you need

Yam or Raw Banana cut into squares
Yogurt - sour yogurt is best for this dish .It needs to be beaten  to remove any lumps
Pepper powder 1 tsp

For the coconut paste
coconut + turmeric (haldi)+green chili - grind all this

For the temperingMustard seeds (rai) 1 tsp
Fenugreek seeds (methi)1/2 tsp
Dry red chili - 3
Curry leaf -5/6


 Start by boiling yam in water with pepper,salt and turmeric added in.

Once the yam is half cooked add the coconut paste and boil.

Now add in the beaten yogurt and shut the flame,if you boil it further the yogurt with curdle.you do not want that do you?

Temper with mustard seeds,fenugreek seeds,curry leaf and dry red chili.

Cover with a lid for a while,it tastes once the flavours mix in well.

Serve it for your Onam 2012 Sadya !!



Punjabi Kadhi Pakore / Pakora | Punjabi Kadhi with Pakoras

As most of you know Kadhi is a smooth Gravy made by mixing chickpea and yogurt,then boiled with spices and then tempered with glarified butter and other spices.

Punjabi Kadi / Kadhi is totally different from the mild Gujarati Kadhi.It is spicy and much thicker than the Gujju Kadhi.The base of this Kadhi remains the same as the Gujarati Kadhi Recipe.Really easy too.

Punjabi's swear by Kadhi Chawal and it is their ultimate comfort food.
Check out how i make it.

First lets make the Pakora / Fritters.

 1/2 tsp ajawain (carom seeds)
1 onion sliced
1 tsp cummin powder
chopped spinach or dill leaves (optional)
1 tsp kasuri methi (dried fenugreek leaves)
1/2 tsp chopped green chili
4/5 tsp chickpea flour
Salt
Mix everything adding very little water and fry till crispy.
 Now for the Kadi / Kadhi
1 cup sour yogurt,or just regular plain yogurt
1/2 cup water
3/4 tsp besan (chickpea flour)
1tsp chilli powder
1tsp turmeric powder
1tsp Cummin powder



Mix everything really well and strain the mix,you need a smooth gravy,a good Kadhi never has lumps.

Boil the mix for 4/5 on a low heat,keep stirring so it wont form lumps.
After 5 min it is time to temper the Smooth Kadhi.
In ghee temper with
1/2 tsp cumin seeds
3 cloves garlic chopped
ginger cut in juliennes - this is a must
2  whole red chili
1/2 tsp asefotida (hing)
Pour it over the Kadhi and boil for another 5/7 min on very low heat.

Now shut the flame and cover it for 10/15 min.All the flavours get mixed in and your Kadhi will taste great.

Serve this Tasty Punjabi Kadhi over steamed basmati rice.

Indian Corn Gravy / Curry | Corn on the Cob Curry | Makai Curry

Delicious Corn On The Cob Curry/Gravy or must i say Makai Curry/Gravy is not something i cook often.

I saw this recipe last month and made it twice already.At first i was not sure on how the taste would be,and yes you guessed right it turned out fantastic.

We had this with steamed rice and the gravy was perfectly absorbed with the corn,and was fun to eat too.

As promised i would only post the easiest and tastiest recipes made in my kitchen,so read on you all on for Tasty Corn on the Cob Curry aka Makai Curry (Gravy).
Please Please try this asap.





Make sure you find fresh corn, on the cob of course.
Cut them in 2/3 pieces and marinate with salt,lemon juice and turmeric for 15 min.
It needs to be marinated,no excuse for that.

Onion Paste Mix
blend 2 onions with 4-5 garlic,2 green chili, 1 tsp cumin seeds,2 cardamom,1 bay leaf and a small piece ginger.

Dry Spices/Masala 
 1 tsp garam masala,1 tsp red chili powder,1 tsp turmeric powder,1 tsp kitchen king masala and a pinch hing

For making the gravy thick - Gravy Mix
Roast 2 tsp gram flour till light brown
3 tsp roasted and powdered peanut powder
The Gravy i am going to show can be used to prepare any other veg dish.
This recipe is a real keeper.


This dish will turn out best if made in a pressure cooker,so use it if you have it.

In butter or ghee add hing then the onion paste
Saute till pink and saute on low heat,then add the dry spices
Cook for 5 min,then add the gravy mix
Now add salt and the marinated corn


 Coat the corn with the masala paste and then add 2 cups water
Pressure cook for 2/3 whistles and now your almost done !

Before serving add 4/5 tsp cream so the gravy gets a creamy taste and lovely pale colour.
No excuse again you just  have to add the cream.

Then garnish with coriander leaves and your yummy Corn On The Cob Curry is ready !


                                                                         Serve Hot !!

add less water if you want it dry

Fried Fish Indian Style | Spicy Masala Fried Fish | Fish Fry in Spice Marination

Masala Fried Fish is made in so many different ways.Here is another great recipe that has a very yummy marinade and gives an amazing crust and flavour after frying the fish.It is a must try and you will love it.

Use any fish of your choice,make sure you clean it in running water a few times, marinating it with a tiny bit of turmeric and a pinch of salt removes the fishy smell so do not skip this step.

For the Fish Fry Marination - Spicy Marination
Shallots 4
Garlic 2/3
Crushed Red Chili Powder 2 tsp
Green chili 1
Ajwain 1/2 tsp
Pepper powder 1/2 tsp
Cumin seeds 1/2 tsp
Make a paste of everything adding lemon juice and salt.

                         You can adjust the spices to your liking.Rice flour is also used for a crispy coating.
marinate the fish in the marinade for 20/30 min then dust with rice flour before shallow frying

So there Masala Fried Fish / Indian Style Fish Fry is ready.You may serve this as a starter or with Rice and Lentils as a side dish.Enjoy !

Yellow Rice Recipe | Yellow Rice with Chicken Cube

Yellow Rice is a Buttery Flavoured Rice which has Turmeric or Saffron and few other spices for a mild taste.And also for a beautiful colour.So tasty i tell you.

The chicken cube which i add is what makes my Yellow Rice Recipe extra special.
This rice goes best with any grilled dish,and with Grilled Fish Tandoori it is a perfect match.

Yellow Rice Recipe with Chicken Cube

Long Grain Basmati Rice - 1 cup
Turmeric - 2 tsp
Garam masala 1 tsp
Lemon juice 2 tsp
1 Large onion paste
Butter 4 tsp
1 Stock Chicken Cube,so no need to add salt

Soak the rice for 20 min.
In a pan add butter and a little oil,this will prevent the butter from burning.Saute the onion paste for 2/3 min.

Add the turmeric powder and garam masala and saute for 1 min,now add the lemon juice.

Add the soaked rice and let the masalas coat the rice.

In 2 cups hot water dilute the chicken cube and add it to the rice,wait for a boil.

After you see a boil,cook on low heat with the pan covered and till the rice is completely cooked.

Easy and Flavourful Yellow Rice is Ready now !

Punjabi Lassi Patiala | Indian Yogurt Smoothie | Sweet Lassi

Punjabi Lassi aka Lassi Patiala is one drink which is rich and creamy and actually cools your tummy after a heavy Punjabi Lunch.
In short it is a Creamy Yogurt Smoothie mixed with cardamom.So so good !!

Authentic Punjabi Lassi a big fail is you do not use full cream yogurt and the right balance of sugar and salt.So give it a taste before serving and adjust the sugar and salt for a perfect mix.

The famous Punjabi Sweet Lassi Recipe is below


 For 2 glasses of Punjabi Lassi Patiala

1 glass full cream thick yogurt
1 glass full cream milk
3 Cardamom pods crushed
6 tsp Sugar or more to your taste
1/2 tsp Salt
few icecubes
1/2 tsp chaat masala to garnish

Blend everything except the chaat masala and pour into a serving glass.
Sprinkle with chaat masala and extra cream(optional).

If you are serving this for a party you can top the Lassi with some Pistachios for some added colour and crunch.Pomegranate can also be added,but i skip it.

I have no idea how many times i must have made this basic pizza sauce.It is my go to sauce and i always keep this handy.Best part is you can dilute it and cook it as a soup too,then finish with some cream.So versatile and easy!

My baby sister would ask me to cook pasta at any odd hour and i would be more than happy as i always had this ready stored in my freezer.After all these years i still stick to this recipe,it is the best i tell you.

Here is the recipe for the best Versatile Pizza Sauce also called Basic Italian Pizza Sauce.
A must in your freezer so you are ready for pizza any time.


Second recipe is my No Cook Pizza Sauce
This no cook pizza sauce is equally delicious and for days when you have no Italian Pizza Sauce left.

You need
1 cup Tomato Puree
3tsp garlic powder
2 tsp onion power
3 tsp sugar
1 or 2 tsp salt
2 tsp oregano
2 tsp Mix Italian seasoning
1 tsp crushed black pepper
All you do is mix everything together and keep aside for 15 min so everything mixes well before spreading over the pizza base.

Few Pizza Toppings Ideas
I mostly make two toppings one is a bell pepper mix and the other will be a mushroom and chicken mix for the base.We then add other toppings on top to our liking.

You can get creative and top your pizza with any veg or meat of your choice.
My hubby's and my favourite combinations are

Cheese and Olive Pizza
Pineapple and Chicken Pizza
Mushroom and Chicken Pizza.

Homemade Langar Wali Dal | Punjabi Maa Dal (Dal Makhni) | Langar ki Dal

There are many names for the King of Dal's.
One is the ever famous Dal Makhni
Langar Ki Dal
Maa Di Dal (mother of all Dal's)
Dal Bukhara
Dal Maharani and Kali Dal.

The taste for all these Daals are almost the same,only difference would be,the proportion of the Kidney Beans and The Black Urad Daal also the amount of time you cook it.

It also depends on how you serve it,sometimes there is a dollop of white butter on top or cream,sometimes ginger juliennes.The base and method of cooking also stays the same for all these daals.

I feel the creamy and luscious taste of this daal is enhanced more if eaten with butter tandoori rotis.

I know you want some now.

Here's the Recipe for Best Restaurant Style Dal Makhni or Langarwali Dal.


If you want to get the most authentic taste,then you need to cook this for 4 hours max,yes 4 hours.
In most homes it is cooked for 8 to 10 hours,many time even overnight.Imagine the taste,ooo my god.

Now if you do no have the time,sure you can reduce the cooking time,but then i cannot promise you that killer king of dal taste.So the choice is yours. 


I cooked mine for 4 1/2 hours.And i used a thick bottom pressure cooker for this.


 ~ First start by soaking 1 cup Black Gram Dal and 1/4 cup Kidney beans overnight for best results.

  ~ Now strain the water and cook with 4 glasses fresh water,simmer and cook on low till soft.
It will take about  45 min to 1 hour.Keep checking and stirring in between.

~ Add 1/2 cup ginger and garlic paste.
Keep simmering,and add the spices and cook till everything is blended.

For the spices, adjust the red chili powder to your taste
Turmeric 1 tsp
Coriander 3 tsp
Red chili 5 tsp

~Now it is time to add 1 cup tomato puree with salt to taste and 1 pinch sugar.

Let it simmer for 30 min.

~Add 1/2 cup butter and 3 tsp toasted Kasuri Methi
with 2tsp Garam Masala.

Let everything cook on low for another half hour.
Please be patient,it will be totally worth it in the end.




OK now the final step add 1/2 cup cream and simmer for 10/20 min.

Now your done.Serve with Naan or Tandoori Roti.
T.i.p - Never add coriander leaves to garnish.It ruins the taste of this dish.

Tofu and Spinach Sabzi / Sabji | Tofu Palak Sabzi | Tofu Palak

In India the classic combo of spinach and cottage cheese is very common.The dish is called Palak Paneer.
Here is the easy recipe Palak Paneer my way.

Today i shall show you another wonderful combination which is a curry flavoured Tofu and Spinach dish.
For this dish you need
Tofu cut in cubes then lightly tossed in oil (you can fry it if you wish)
Spinach - small bunch cut roughly
Onions - 1 cut fine
Tomato - 1 cut fine

Dry Spices
Curry powder 2 tsp
Cumin seeds 1 tsp
Onion seeds 1 tsp
Garam Masala 1 tsp
Red chili powder 1 tsp
Bay Leaf - 1

Ginger/Garlic/Green chili roughly crushed
Dried Fenugreek leaves 1/2 tsp

Start by tempering the cumin and onion seeds in oil,then add bay leaf.
Add in the chopped onion and the dry spices.
Cook for 2/3 min till the spices are cooked then add the ginger/garlic/green chili.
Now add the tomato and salt to taste,saute till cooked and the oil is separated.
Its time to add the spinach now and cook covered till wilted,add in the tofu now.
Cook till the tofu is soft and then add the fenugreek leaves.
Cook 2 min more,now your done !

Cucumber and Mint Lassi | Refreshing Cucumber Lassi | Cucumber and Yogurt

There are many recipes for Cool and Tasty Cucumber Lassi perfect for summer and finally i made my own version.
The first time i tasted this was at my friend Nandinis place,it was refreshing and i loved it.

I plan to make this again when I'm grilling fish or chicken and serve it as a drink appetiser for my next dinner party.Cool ha !

In many food shows i have seen Cucumber Soups and also Salted Cucumber Drinks mostly served as appetisers,it was on my to do list and finally i give it a shot.

So keeping all this in mind here is the recipe for Refreshing Cucumber (Kheera) Lassi
.


Savoury and Sweet it was perfect

Recipe for Sweet / Salty Minty Cucumber Lassi
For 2 glasses

1 cucumber chopped (do not remove the skin)
1 cup yogurt(i use skimmed)
roasted cumin  less than 1/2 tsp
pepper corn 1
black salt 1 pinch
sugar 1/2 tsp
salt 1/2 tsp
crushed ice
mint 2/4 leaves


Lightly crush the cumin and pepper corn,keep this spice mix aside for now.
Blend the cucumber,mint,black salt,regular salt and sugar,then strain it.
Now blend the ice cubes,yogurt with the strained cucumber mix,add in the spice mix.
Make sure to taste before you serve,adjust the salt and sugar to your taste.
Now serve your Cucumber Lassi chilled and sip away !

Janmashtami Food Recipes | Indian Festival Breakfast Thali | Indian Festival Special Recipes

Here is a Special Breakfast Thali i made for Janmashtami.

It was a real treat,i agree it is a very heavy meal for a breakfast,but on festivals i say why not.

Another famous dish served on Janmashtami is Gopalkala.Now that is for another post,so stay tuned in.

For this special Mathura Breakfast Thali (Janmashtami Recipe) i made ~
          Karah Prasad - Mathura Alu - Bedmi Puri and Thandai

Mathura Alu - In ghee temper cumin seeds,onion seeds(kalonji),hing,whole red chili and grated ginger.
Now add in green chillis and saute for a few seconds.

Add in roughly chopped potato and saute adding some salt.

After 2 min add in red chili powder,dry mango powder,ginger powder and turmeric powder.

Saute for 2 min and then add in water,cook till potatoes are soft and the pieces are broken.

You can make this in a pressure cooker if you wish.To finish garnish with coriander leaves.

Karah Prasad - This sweet dish is made with wheat flour.
Follow my Suji Halwa recipe and instead of semolina use wheat flour.It is a great halwa and the aroma is outstanding.

 As always prep things before for  making a thali,for a breakfast thali try cutting the veggie the night before, and keep the spices and pastes ready.

Bedmi Puri / Poori Recipe | Uttar Pradesh Street Food Recipes | Dal Stuffed Puri / Poori

As you all know Mathura is Lord Krishnas Birthplace so here is a famous Mathura Breakfast Dish.
Bedmi Puri / Poori is found in every street corner and is served with the famous Mathura Alu Sabzi.

For 8 Bedmi Puris
start by soaking 1/2 cup urad daal for 6 hours
spices used
red chili powder 1/2 tsp
grated ginger 1/2 tsp
fennel seeds 1/2 tsp
green chili 1 chopped fine
hing(asafotida) less than 1/2 tsp
cumin seeds 1 tsp
salt to taste
for the dough
1 cup wheat flour
1/2 tsp semolina
1 tsp ghee
1 tsp salt
water to bind
make a stiff dough and cover.Allow to rest 10 min.



To cook start by cooking all the spices in a little ghee and add the ground urad daal paste.
Cook on a low heat till the urad daal gets coated with the spice mix.
Scrape out the bottom of the pan as you saute.
Allow this to cook on low for 5/7 min and your done.Make tiny balls and let it cool.
When the daal mix is cooling,make the dough.

After the daal mix has cooled
stuff the urad daal mix into the dough ball and roll out
Fry till puffed up and light brown.
 My tip for making perfect pooris/puris.
1.Make sure the dough is not too soft.
2.Do not roll it into a thin circle,keep it a bit thick
3.Never dust flour while rolling a puri,dip in oil and roll
4.While frying puris flip once once,after cooking once side,flip one time then cook the other side.
Turning puris/pooris more than once will soak up all the oil and the dish is a fail.So one flip is all you need.

If you keep these tips in mind you will never have soggy puris that are soaked in oil.

   Serve this for Krishna Janmashtami (Lord Krishna's Birth day).

Rice Kheer (Chawal ka Kheer) | Punjabi Kheer | North Indian Kheer

In North India Rice puddings are called Kheer and in South Indian it is called Payasam.

Today i shall show you a classic Punjabi Style Kheer or North Indian Kheer Recipe.

This recipe takes 1-2 hours to cook but it is worth the effort.So make this when you have the time.

For best results use the best quality rice you have.It must be long grain basmati and must smell wonderful,so it is important you go finding the best brand.

If you don't have good basmati rice you can still make it but then the taste and aroma wont be fabulous,also the small grain rice will break and turn into a lump.You do not want that.

For this dish i insist full cream milk and superb quality long grain rice.

So to make this Punjabi Style Kheer or rich Indian Rice Pudding
you need :
5 cups milk
1 cup rice (soaked 2 hours)
sugar to your taste,i added 2 cups
saffron a few strands
almonds and cashews about 10/12 each

Start by soaking basmati rice for 2 hours..Then in a thick bottom pan add the milk and soaked rice,cook on low heat for 1 hour,please dont forget about stirring it every 15 min or else it will get stuck to the bottom of the pan,then its goodbye to Chawal Ka Kheer.

After 1 hour of cooking add crushed cardamom pods,cook for half hour and add saffron strands mixed with little milk(optional).I did add a tiny bit.

Don't forget to stir in between,by now the rice will be soft and the milk will be thick,now its time to add the sugar,add it to your taste.

In another pan add ghee and saute almonds and cashews till light brown,add it to the kheer..keep boiling for another half hour.Now it is done.

You can cook it on very low heat for another hour if you want it a bit more thick and creamy.
So now your special Chawal Ka Kheer or Rice Kheer is ready,serve this hot or cold.
I have it warm in a big glass,no bowls when i have this.

Nutty Green Apple Salad | Savoury Fruit Salad with Walnuts

I usually cook with green apples mostly when I'm baking or just eat them on its own.
So here is a Quick Savoury Salad with some Green Apples and Walnuts.

This yummy Apple and Egg Salad Recipe is from Good house keeping,i did change it a bit by adding Walnuts and Grapes.SooYum !

It was perfect for our lunch yesterday,these days it is getting way too hot so its nice to have a bowl of soup and a salad with some eggs.
Do try this light salad you will love it.

 For 2 you need :
Salad mix
Green apple -2
Sweet potato - 1 (boiled with salt)
Celery - 1/2 cup
Green grapes - about 5/8
Chicken breast boiled with salt and pepper and cut in chunks (optional)
Walnuts a handful

Dressing
Mayo - 1/2 cup
Salt to taste
Pepper - 1 tsp
Vinegar - 1/2 tsp
Italian herbs - 1/2 tsp

Boil eggs and keep aside.

Method -
Chop all the salad mix in equal sizes,leave the grapes whole, place the mix in a bowl,in another bowl mix the dressings and add it to the chopped salad,toss a few times and check for seasoning.Add more or less herbs to your taste.Serve with boiled eggs on the side.
Now your done.

You can make this nutty apple salad meal more interesting by serving with some crusty bread and some soup,or serve it with some grilled chicken or fish.This can also be a hit at your next barbecue.Have fun !

Ways to Serve Watermelon for a Party

I cannot stress enough for most home cooks to keep a packet of Chaat Masala in their pantry.
It is a spice mix you can get from any Indian Store This spice mix is used in cooking, to sprinkle on curry's or jazz up appetisers and even fruits.

Coming back to this dish..
Eating Watermelon on its own can get boring,is it just me? you ever felt that too?
Have you ever thought how to serve Watermelon for a Party? in a cute way of course.
Then keep reading !

All you do is....

Cut individual portions of the watermelon and scoop out the fruit and place it on the inner part.
Then sprinkle chaat masala on top and serve immediately.Its done !

For a party keep the chaat masala in a separate bowl so your guests can add it to their liking.

How to make Mughlai/Shahi Gravy Paste | Rich Indian Gravy Paste

Making Gravy Pastes for Storing is a wonderful and easy way to cook any kind of rich dish if you are in a hurry.The creamy white gravy paste is used for shahi veg dishes,mostly for malai koftas and also for white meat based gravys.
The Brown Gravy Paste is used in most Punjabi and Mughlai gravy dishes.

Once you have these pastes ready and stored, life is so much easier in the kitchen and you are always ready to dish up something special for your family.


For the Shahi (white gravy) paste-
garlic 4
almonds 4(soaked then peeled )
cashews 4 (soaked 1 hour)
cardamom 2 pods
melon seeds 4 tsp(soaked 1 hour)
bay leaf 1
boiled onion 2
Grind all these ingrediants adding cold milk,add little milk at a time as the paste must be thick.
Store this in ice trays and use when ever you need some white gravy.

For the brown gravy
Fry onions till brown and drain well on napkins,then follow the same method for white gravy and then add the brown onions,grind all this till smooth.Your brown gravy is now ready.

McDonalds Egg Patty Dupe | Homemade Egg Patty | Egg Patty Made at Home

This is a different take on McDonald’s Egg McMuffin,a healthy version so you don't feel guilty afterwards.
I skipped the butter,cheese,bacon and also used whole grain buns instead.

To reduce calories i used turkey sausage and used grainy mustard instead of butter to spread on the buns.
It was seriously delish.Try it some day.

after cooking the eggs,they looked like a nice big patty

i used 2 eggs per person
salt to taste
to season i used garlic and minced onion
also i cut turkey sausage in tiny pieces
you can use an opened tuna can cut on both sides or egg rings to cook the eggs
i have a cute mini sauce pan which is the perfect size for this recipe 

beat the eggs and season with,salt, garlic and onion pwd - keep aside
then saute the sausages till brown in olive oil ,now add in the beaten eggs

keep the flame low and cook,after 2 turn it gently and cook for another 2 min.
(make sure to not overcook the eggs)
Its done now.
              The sausages are hidden below so when you serve these everyone gets a good surprise
             

spread mustard on the cut bun slices and add the fluffy egg patty in between
serve hot with any fruit of your choice
