Exotic Kiwi Cheesecake (no bake ) | Kiwi Cheesecake with Saffron

This yummy Saffron and Kiwi Cheesecake sure does taste exotic,I can promise you that this dessert is not a very common one.Very sinful indeed.
I insist you try this one out,you will be very pleased with the results.

 Exotic Zespri Kiwi Cheesecake

I tried them in glasses as i always feel individual portions set better and who does not like a Cheesecake Filled Glass.I used Zespri Kiwis as they taste amazing.

Oh and this dessert is a no bake one so all you do is give it  a few hours in the fridge to set and your done.

Here are the ingredients (makes 2 large glasses and 2 shot glasses)
2 Zespri Kiwis
3 tsp gelatin dissolved in 1/2 cup water
1/2 cup super fine sugar
300 gm Cream cheese (low fat)
1 cup crushed crackers
2 tsp melted butter
2/3 tsp Crushed Pistachios and Almonds
Few Saffron Strands

First start by dissolving the gelatin in hot water and also crush the biscuits.Keep aside.
Peel the Kiwi skin and make a puree with 2 tsp sugar

 Mix the Kiwi puree in the getaline when it cools.
Mix half the cream cheese pack with sugar.Make sure it is mixed really well.

 In the crushed biscuit mix,add melted butter and 2 tsp sugar.Mix till crumbly and moist then make a base in the serving glasses.A thin base is what we need.Chill in the fridge for 10 min.

 In the other half of the cream cheese add a few strands of saffron and the crushed pistachios and almonds.
Blend well.You can assemble the cheese cake in any order you like,but this is how i do it.

> After setting the biscuit base for 10/15 min.Add the mixed kiwi and getatine mix and set for 1 hour.
> After 1 hour the kiwi base will be set.Now add the plain cream cheese mix on top.
> Then finally all you do is top the saffron cream cheese mix.Chill for 5/6 hours.
> It is ready now,i told you it was so simple.

Best Tandoori Chicken Recipe | Homemade Tandoori Chicken

How to Make Restaurant Style Tandoori Chicken?
This is a very common thought in the minds of most home cooks,and when ever i used to grill chicken and attempt to make Tandoori Chicken i was never satisfied with the results,i always felt something was missing in the marinade or the meat was not grilled right.

Finally i got hold of this amazing recipe and my Tandoori Chicken tasted perfect,it is very simple and basic and you will be pleased with the results.

Keep reading for making Great Tandoori Chicken at Home.

This method always helps for getting juicy chicken with a lovely grilled exterior.

 1. When ever you decide to grill chicken,fish or lamb never ever add the marinated meat on to the baking tray to grill.Basically what you get is chicken pieces floating in their juices,which needs more grilling time to dry up the juices.
More griiling time means tough meat,and the marinade is burnt and all the flavour is gone.
Now is that Grilling? Of course not.

2. It is important to add it on the wire rack,with the baking tray below lined with foil, just like the pic below.
 This way the meat stays dry with proper heat distribution and this helps in getting perfectly grilled meat which is juicy from inside.
Also brush butter or oil every 10 min,this helps in getting a good flavour and also prevents the meat from drying too much.

3. Best part is all the extra fat drips down.woo hooo

4. Authentic Tandoori Chicken in Punjab-Pakistan never has food colour,i always skip it.
Look at the dripped fat after grilling,can it get more better?

 Recipe for Flavourful Tandoori Chicken 
(Adjust the spices according to your taste)

~ Use chicken thighs or a whole chicken.I used a whole 1 kg chicken.

~ Wash the chicken pieces well and marinate for 5 min with salt and few drops of milk,this remove the bad chicken smell.Wash again.

~ Make 2/3 cuts on the flesh and then completely dry it with a paper towel,drying it helps for the marinade to coat the chicken pieces.

Tandoori Marination
1 cup thick yogurt
4 tsp kashmiri red chili power
2 tsp garam masala
1 tsp pepper powder

Spice Paste
Make a paste with 10 big garlic cloves,1/2 inch ginger and 4 green chili's adding only 1 tsp of the yogurt,then add the tandoori marination listed above.
Do not add salt at this stage.
Blend again.
Never add too much yogurt while grinding pastes as it will get very watery.

> Add the Spice Paste to the rest of the yogurt and mix,now add salt,then strain it.
Marinate the chicken with this,best over night,but minimum 2 hours is important for the flavours to get mixed.

> After your done with marination lay them out as shown in the pic above.

> Grill for 25/30 min.Brushing with oil and turning the meat so it cooks evenly.

> Serve with lemon and corriander dip.

Easy right?

Sukhi (dry) Aloo Matar | Indian Style Peas and Potato

There are so many ways Alu/Aloo Matar is prepared,every one has their own special recipe to this Popular Indian Veg Dish.. Aloo Matar is made into a gravy when served with rice and made dry to go with rotis.

Today i shall show you my way of making this easy dish,and also a very simple tip to get the "Perfect Alu Matar ki Sabzi".
Notice how the potato chunks are intact and not broken or mashed.

Tip to keep potatoes intact while cooking and also how to make them more flavourful.

After peeling the potatoes,wash once to remove the starch.Then cut into chunks or any shape you want.

Before cooking boil the potatoes with a pinch turmeric,salt and shahi jeera for 5 min,no longer than that.

This helps to get added flavours into the potatoes,and they always keep their shape after cooking.
Do try it and see the difference.
                                                       do not over boil,5 min is all you need.

Recipe for Alu Matar ki Sabzi (Indian Potato and Peas)
Serve (2)

>  2 Potatoes cut in chunks and boiled as showin above.Remove with a slotted spoon.
> 1/2 cup peas boiled for 2/3 min in the same water the potatoes were boiled.
> 1 tomato blended
> 1/2 tsp cumin seeds
> 1 onion blended with 2/3 garlic cloves,2 whole  red chilis,1/2 inch ginger and 2 green chillis.
> 2 tsp kitchen king masala
> 1 tsp sugar> very important to balance the sour tomato taste.
> 1 tsp garam masala
and salt to taste

In oil or ghee add cardamons,cumin seeds and 1 bay leaf.Add the onion paste and saute till light brown and fragrant,now add in sugar and the kitchen king masala.

Saute for 2/3 more min and then add in the tomato paste and salt to taste.
Cook on low till the boil separates.

Add the Potato and Peas and cook covered for 5/7 min.Open lid and saute for a few seconds.Again cook covered for 2/3 min till done,add garam masala once completely cooked.

Garnish with coriander leaves before serving.

Now your done ! Serve with Rotis or make a yummy Toast Sandwich.
Flavourful Sukhi (dry) Alu Matar is ready.

Tasty Veggie Burrito Recipe | Yummy Veg Burrito

This Awesome Burrito Recipe is a complete meal in itself..Lovely flavours and the melted cheese mixed with the stuffing, along with the rice in between is mouthwatering.

Non vegetarians you will not miss the meat in this Yummy Burrito,the filling is so yummy.

Here's the recipe for very Tasty Veggie Burrito !

I use a mix of wheat,corn meal and flour for the tortilla.

Home made Tortilla Recipe
1/2 cup wheat flour
2 tsp cup all purpose flour
2/3 tsp corn meal
1 tsp butter
salt to taste
warm water
make a dough by mixing everything,cover in cling for 1 hour before making the tortillas.
Now for the Tasty Burrito Stuffing Mix (serves 4)
1/2 onion
1 cup baked beans
1/2 cup corn
1/2 cup spring onions
2/3 tsp grated cabbage
coriander or Parsley

Spices3 tsp Mexican Spice Mix
1 tsp oregano
Pinch sugar
Salt to taste
small pinch chili flakes

> Cooked Rice 1/2 cup

> Any cheese of your choice (i prefer Mexican) and Mozzarella

Some yummy Mexican Salsa for a nice zing

Saute the above ingredients except the spices in butter (not more than 2 tsp ) for 5/7 min
then add less than half cup water and cover for 5 min.
Once the water dries up,add all the spices and mix well.

Stuffing is ready ! Yum

Now for Rolling the Burrito

Take your cooked tortilla and top it with some stuffing,then some salsa,a little bit of rice and cheese.
Roll it and secure with toothpicks or cover with paper.

Before serving cut them and serve in a platter,along with olives and sour cream.
Now your done,enjoy your Burrito !

Assorted Uttapam Platter | Uttapam (Variety Thali)

A few restaurants serve Assorted Mini Uttapams Thalis so you get to taste the various toppings the restaurant offers,these Variety Thalis are really tasty and i just had to make my own.

I made 5 different Uttapam Toppings for breakfast and stuck to the standard size,i served it with tempered green chutney and and we had a Restaurant Style Uttapam Thali ready ! So easy too !

You can add more toppings of your choice,but i prefer the combinations of the ones i have made.

 Adding a lot of veggies or too many spices ruins the flavour of uttapams,it is best to keep it simple and let each one of your assorted uttapams taste different and also look different.

This Uttapam Platter can also be made for brunch or a tea party.If you are keen to impress your guests or family you can also make a live Uttapam or Dosa Counter using an electric stove in your dining room.

 What i made :Start from the top middle to left
Plain Uttapam

Idly Podi Uttapam

Red and Yellow Capsicum Uttapam (mixed with coriander leaves and red chili)

Onion Uttapam

Cheese and Tomato Uttapam (use amul cheese for a true Indian taste)

Make sure you use well fermented dosa batter,the batter must also not be very runny.      

To cook Uttapams Please use only Ghee or Butter ! I add not more than 2 tsp,thats more than enough.

 Enjoy your Assorted Uttapam Platter.

Curry Flavoured Steamed Rice (Japanese Style )

Curry Flavoured Steamed Rice is a must in the famous Japanese Okosama Lunch Recipe.

You can cook it in your rice cooker,but i made it on my stove.I guess it makes no difference.

I find this recipe very healthy as there is no oil or butter added to make this dish.

In the original recipe you drizzle honey before serving,i tried it once,it was not to my taste.
So i skip the honey when ever i make this.

I usually serve Curry flavoured Steamed Rice with Fried Chicken,but you may have it as it is or with any side dish of your choice.

I'm sure your family will love the flavours in this Curry Rice made Japanese Style.
Do try it ! Its Yum and so quick to make!

1/2 Mix veg
1/2 cup Rice
1/2 tsp Curry Powder
1/2 tsp Ketchup
1/2 tsp Woochester Sauce
1/2 tsp Soy Sauce
2 cups veg or chicken stock (you can also use water)
Salt and Pepper to taste

Wash the rice and soak for 15 min.

In a pot add all the ingredients listed above,yes everything at once.Check for seasoning.

Now boil,once it starts boiling lower the flame and cover for 15 min.Do not open the lid.

After 15 min open the lid and check if it is cooked,if not cover and cook another 5/7 min.

Now your done ! I told you it was so easy !

Asparagus Tossed in Garlic Butter and Sesame Seeds | Healthy Asparagus Recipes

Asparagus cooked in a simple manner with a tiny bit of butter,garlic and sesame seeds tastes the best,i make this dish when i have grilled chicken or fish.And eat it even as a snack.

The sesame seeds bring out a wonderful nutty aroma and flavour to this dish,so do not skip it.

This recipe has very little amount of fat,a little bit of butter goes a long way for this dish.

Its so must try it.

                                                        Healthy Asparagus Appetizer
 all you need is...
asparagus--garlic--butter--olive oil--pepper..salt(if you wish) ..

wash the asparagus and cut the tough ends.. boil for 5 min (you can skip boiling them,but i do it)

now all you do is saute them in olive oil and butter along with garlic,i chop the garlic in big chunks
you can crush them if you want...cook for 5/7 min and add pepper..a pinch of salt to finish it off..

NOTE : Dont worry the butter is very little,the asparagus had some water in it so it seems like a whole lot of butter

  and then your done !!

You may add olive oil instead of butter if you wish to keep this dish super healthy,i add butter as it tastes wonderful with garlic.Do try this Easy Asparagus Tossed in Garlic side dish.

Tuna Stuffed Cherry Tomato (cute food) | Tastiest Stuffed Cherry Tomato Recipe

Do you like Tuna? Yeh? then you need to pop these darlings in you mouth for sure.So so so good !

What amazing flavours and so adorable to look at.I totally fell in love.

You will be pleased once you make these and this one is a sure hit for your next party.
It is the Tastiest Stuffed Cherry Tomato dish i have ever eaten till day,and also one of the cutest looking dish i have made.

In case you do not like tuna that much,you might become a fan after trying this out.

 I got this recipe from my favourite You Tuber named Ochikeron.This one is her award winning recipe.
More power to Ochikeron,she's the best.

My version of Cherry Tomato Stuffed with Tuna Melt and Rice Appetizer

 Keep 1/2 cup cooked rice ready before starting ,cool completely

      Use firm cherry tomatoes,wash well and pat dry.

Cut the top and scoop out the pulp,be gentle,careful not to tear the tomato flesh

All done,now lets make the stuffing. 

 You may add more spices and skip a few ingredients in this recipe,but for best results stick to the exact recipe.Also keep in mind to serve these freshly made.

                                         Pickle or Gherkin is what gives this dish that extra zing

   For 6 small cherry tomatoes
2 tsp boiled corn
2 tsp chopped onion fine
1 gherkin chopped fine
3 tsp tuna
4 tsp mayo
salt to taste
pepper to taste

 Mix well and keep aside for 2 min,now prepare the rice by adding regular vinegar or sushi vinegar

                                          Stuff the tomato with rice,just a little,not too much

                                                                 Now stuff the tuna melt

                                              Top with the cut tomato slice just before serving
                                          Cherry Tomato with Tuna Melt Appetizer is ready !!
