Bengali Style Fried Eggplant | Begun Bhaja Recipe | Indian Style Fried Eggplant with Spices

This recipe is perfect with daal,chawal and dahi...The eggplant is not deep fried,instead its shallow fried so all the spices cook perfectly...Its a very common bengali veg dish and for those who like eggplant,this is sure a winner...i love it hope you enjoy this dish too !

its ready !

cut eggpant in circles
now for the marination-ginger/garlic,red chili,garam masala,cumin,turmeric,chaat masala and salt
(adjust spices to your taste)

marinate the eggplant for 15 min

add olive oil or mustard oil and shallow fry till light brown,then add corriander leaves
after 5/7 min,add few drops water and cover with a lid till soft and cooked
then remove lid and cook another 2/3 min

looks awsome right?
