Spicy Egg Masala Curry | Spicy (pepper) Egg Curry

Here is a spicy and mouthwatering egg curry with a very flavourful masala,you may adjust the spices to your liking,but if you are found of spicy food then try the exact recipe shown below.

This egg curry is mostly eaten with rice along with a sweet and salty raita for the perfect combo.
And i  feel this egg masala is perfect for cold days when you need something peppery and spicy to keep you warm and cosy.
Do try it some day...

For Spicy Egg Masala you need -

3 eggs hard boiled eggs (make 2 cuts in the middle of the eggs)
1 large onion
1 tomato
5 garlic and 1/2  inch ginger crushed
5/8 curry leaf

Dry Spices
1 tsp red chili powder
1 tsp turmeric powder
1 tsp coriander powder
1 tsp sambar powder (not to miss)

1/2 tsp mustard seeds
1/2 tsp cumin
2 tsp coarse pepper powder
Salt to taste
Sugar 1 pinch

Start by making a paste by mixing the dry spices with water,the paste must be thick.
Keep the spice paste aside.

In a pan add 2/3 tsp oil and temper with cumin and mustard seeds,add curry leaf and saute.

Now add in the chopped onion and saute till pink,also add in the ginger and garlic and saute till cooked.

Add in the chopped tomato and cook covered till the tomato gets soft ,add salt and a pinch sugar now add in the spice paste and saute till the oil separates.

Now add in 1 cup water and mix everything well,add in the eggs and the pepper powder,cook covered for 5/7 min.You can also garnish with coriander leaves if you wish,but i skip it.

Now your done ! Serve warm with rice or roti.

Paneer Chandi (royal paneer recipe) | Rich Paneer Dish

Paneer Chandi is cubes of cottage cheese simmered in a white gravy then decorated with silver(leaf) foil.
This dish is very mild and cooked in a creamy gravy with just a hint of whole aromatic spices and is best eaten with a spicy veg pulao or garlic naan.

I made this for my diwali dinner as a special treat.If you do not have silver foil available just garnish with blanched and peeled almonds.It will still taste great.

Hope you try this royal panner recipe.

 For making Paneer Chandi you need

Full cream paneer - 1 pack

For the paste
1 cup milk
2 onions
1/2 inch ginger
2 garlic pods
4/5 cashews - soaked for 15 min
2 green chilis

1 bay leaf
2 tbs cream
2/3 cardamom pods
1 tsp shah jeera
1 tsp sugar
salt to taste

Silver foil for decoration

~ In case you want to skip the cream and milk you can check out my white gravy paste and cook the panner adding this paste.But for a festival i insist you use all the "good stuff.

So here is the recipe

Start by making a smooth paste with the onion,ginger,chilis, garlic and cashews.
Blend everything with little milk.Keep some milk aside for later.

For best results use panner which is kept out of the fridge,then lightly fry the panner in ghee,make sure you do not brown it.

Remove the pieces and in the same pan add some more ghee,and add the whole garam masalas.
Then add the blended paste and cook on low till the ghee separates.Add salt and sugar.
Make sure you cook it on low heat,the gravy must have a very light golden colour.

Now add in the paneer and toss gently,add in the remaining milk so the paneer gets soft and cook covered for 2/3 min.Be very gentle when you stir the cubes.
Then add in the cream and cook on low heat for 5 min.Switch of the flame and cover for 10 min.

Serve in a silver plate and decorate with silver leaf before serving this royal dish.
Now your done !

Special Diwali Sweets (flaky sugar dipped pillows)

Here is a very tasty sweet for your diwali menu.I have no name for this,but it is a cross between a Chiroti and Khaja,this sweet dish has a very unique taste as its flaky and you then get a wonderful crunch from the toasted almonds.
I promise you your family and guests will love this,do try it out and let me know how you like it !

Once you make the dough you can get creative and top it with dry fruits,add chocolate syrup or for the stuffing you can also spread with a mix of besan and rice flour.
The choice is totally yours !

Back to the recipe !
make a paste with rice flour and ghee - mix till creamy
toast the almonds and chop for garnish
after following the same recipe of the Chiroti inspired sweet(link above)
apply the rice flour and ghee  paste  and instead of cutting them small cut them a bit big and flatten with a fork...
then fry on a low heat till golden brown

                                                          they will get big and a bit puffy

they are crispy and light after frying
make sure you fry on low heat so it cooks evenly
 

after frying,cool for 5 min,then dip in sugar syrup i added cardamon and saffron to the syrup
 Once you dip them in syrup top with chopped almonds and allow to rest.
Now your done,enjoy this wonderful sweet and do not forget to share !

Diwali Menu Ideas (Homemade Punjabi Thali) | Diwali Lunch/Dinner Ideas


Looks like a lot? Oh yes it is,but then don't we all deserve a wonderful Thali Meal for Diwali made in our very own kitchen? As always i cannot stress more on making even the most time consuming meal a fun filled time,and i say in cooking there is never a boring moment.

All these dishes are easy to prepare and will be perfect for your diwali lunch/dinner menu.Your family and guests will love them,i promise you.

And like last time when i posted my South Indian Thali  i wrote on how to prep things before.
Do read it if you missed that out.

Planning is a must so you still have that smile when you are ready to serve.
But then i warn you - Have this Punjabi Thali only if you are sure about having a good nap afterwards.
It is quiet a heavy meal,so try making this only on special occasions.

Sev Tomato Sabzi/Sabji (Gujarati Style Sabzi) | Sev Tameta nu Shak

Sev Tameta nu Shaak is a very popular Gujarati dish,it is also one of those dishes that can go wrong if cooked for a longer time,and this dish cannot be eaten as a left over,do not even think of doing that.
You need to make it and eat it hot, as if this is kept for a long time the ghatia will get soggy,and the crunch is the best part for this shaak.

I just love the sweet,spicy and sour taste that we get from the tomato,chilis and jaggery.
So please have this just off the stove with roti or fulkas and you will be glad with the results.

Personally i like the sev crispy and i add it on the top of the shaak,but traditionally it is mixed in with the tomato mix.You can try both ways and then stick to what you like.

Note : I forgot to garnish it with coriander leaves before clicking pics.But you must not skip it.
 
You need
1 large tomato chopped fine
1/2 tsp crushed ginger
2 green chilis chopped fine
Jaggery to taste
Sev or Ghatia
Coriander leaves for garnish

Spices
1/2 tsp Mustard seeds
1/2 tsp Cumin Seeds
1/2 tsp Hing
1/2 tsp Coriander powder
1/2 tsp Red chili powder

Start by adding hing and all the spices listed to hot oil and saute, then add in the crushed ginger and green chili,now add in the tomato along with salt and saute for 2/3 min.

Once the tomato is soft and well mixed with all the spices add the jaggery and saute another min.Add some water and allow to boil and dry up.Just a little water is all you need.

At this stage you may add in the ghatia and toss everything.I add the ghatia on top,as i like it very crunchy.

Then garnish with coriander leaves and serve hot with rotis.

Paneer Kofta Curry | Cottage Cheese Balls in Gravy

Paneer Kofta Curry is what we had for lunch today, the gravy for this dish is a mild and creamy tomato based gravy, and koftas are made with an outer covering of potato and a panner stuffing.
Really quick to make and very tasty too.This dish goes best with basmati rice with some yogurt on the side.

Here's the recipe for Paneer Kofta Curry (cottage cheese balls in gravy)



For the Kofta's
1/2 cup Grated Paneer
1 potato boiled and grated
2 tsp cornflour
coriander leaves chopped fine
1/2 tsp chaat masala

For the Gravy
1 onion crushed with 2 green chilis
1 tomato
2 tbs ginger and garlic paste
1 tsp tomato paste
1 tsp cumin powder
1 tsp garam masala
1 tsp whole garam masala (pepper corns,cardamom,bay leaf and cinnamon)
1 cube Shahi Gravy Paste
1 tsp sugar
salt to taste

Start by making the Koftas,add salt and 2 tsp cornflour to the grated potato and keep it aside.

Then add chaat masala,salt and coriander leaves to the grated paneer..Now make medium size balls with the potato and flatten a little,stuff the paneer mix into it and dust with cornflour.

Keep it the fridge for 10 min,then fry till golden brown.


To make the gravy

Saute the onion along with ginger/garlic paste in oil till soft then add the chopped tomato,saute for 5 min then add the dry spices.

Cook till the raw flavour goes and then blend till smooth adding little water.

Once you blend the mix in another pan add ghee then add the whole spices and bay leaf.

Add the blended mix and add in the shahi gravy paste along with salt and sugar,wait for a boil then cook covered for 5 min,now add in the koftas.

Cover the koftas with the gravy.

Now shut the flame and cover the pan for 2/3 min.Garnish with coriander leaves before serving.

Serve this kofta curry with rice and Angoori Raita.

 
 
    You may adjust the spices to your liking,but this dish tastes best when you keep it non spicy.

This is a very easy kofta curry,and if you fancy making this a non veg dish,you may stuff the potato with some cooked minced chicken and add it to the same kofta gravy.Just follow the same recipe.
It tastes fabulous with chicken too,and you will love it for sure.

This is my no 1 Recipe for Suji / Sooji  Halwa,I call it The Worlds Best Halwa.

It is actully a recipe i got from a halwa maker,i also got his secret tip,something which many took me by surprise.So glad i got it,it made a world of a difference for my Suji Halwa.
This Halwa is a must try and you will stick to this recipe after you taste it.

It is a Unique Suji Halwa taken to another level,seriously.
Perfect for any Indian Festival as a Prasad or simply make it when you crave some Semolina Sweet made Indian Style,Desi Style.

1/2 cup suji(semolina)

1/2 cup ghee(you may add 1/2 cup)

1 cup water

cashews

cardamom pwd

what makes this halwa special?
3 tsp besan(gram flour)
less than half cup white sugar
2/3 tsp brown sugar
follow this recipe to get the ultimate halwa flavour !

melt ghee

on a low flame brown the suji,be patient

it takes 10 min to brown
then mix in the besan,saute on low heat again

you will get a great aroma by now

mix in the sugars and saute 5 min

add in 1 cup hot water ,to this also add in a tiny pinch salt,
salt gives a balance to any sweet dish
keep the flame low

let the water dry slowly...
see the beautiful colour of the halwa...thats what we want !


serve warm !
nothing beats this halwa !

Spiced Fruit Cake (eggless fruit and nut cake) | Fall Cake Recipes ( Festive Eggless Baking)

 Fall/Autumn is a time for all the cool weather classic like baked potato,apple pie,squashes,mac and cheese, roasts,thick soups and spiced cakes.

As we are preparing for the coming cold months i think a Spiced Fruit and Nut Cake will be a great hit and a wonderful way to welcome the winter and fill your kitchen with festive aromas.

This yummy Spiced Fruit and Nut Cake tastes great on its own but when you serve it with a nice big cup of coffee and top it with some whipped cream it gets all the more indulgent and perfect for fall days.

You may also make these as Edible Gifts for Halloween Parties,Thanks Giving,Christmas or any other occasion.Just make sure to wrap them all cute and tie with cute strings.

My recipe is also an egg-free one and completely fuss free,all you do is mix well and bake.
That's it ! So easy !


Dry mix (sieve it once)
1 1/2 cup all purpose flour
1/2 tsp baking powder
1/2 tsp cinnamon

1 pinch ginger powder
1/2 tsp baking soda
1 pinch salt


Wet mix
1 cup condensed milk + 3 tbs sugar
1/2 cup milk (room temp)
1 tsp vanilla extract
1/2 cup oil

To add to the batter just before baking
2 tsp raisins
2 tsp chopped almonds
1 tsp vinegar
Preheat oven to 180c 10 min before mixing the cake batter.
  1. In a blender and add the entire wet mix and blend it till well combined and mixed for 2 min.
  2. Add the sieved flour mix in 3 batches.Beat for 2 min during each batch.Mixing it well is very important.No lumps have to be seen.
  3. By now everything will be mixed and creamy.
  4. Now add the vinegar and dry fruits, mix well with a spoon (do not use the blender now) 
  5. It is ready to bake now.35/40 min for a cake.
  6. 25/30 min for mini loafs.
  7. Now your done,cool it then eay away !

Garlic Naan Recipe (cripsy) | Garlic Naan Bread

The dough for this Naan Bread is very versitile,i use it for pizzas,for a tea snack,garlic knots,pinwheels,naan pizza and even cinnamon rolls.

It always turns out great and it is my go to Naan Recipe.
Usually the texture of the Naan's with this recipe is very soft,but today i wanted Cripsy n Crunchy Garlic Naan's so i grilled them on low heat a bit longer than the usual.We had these with tea,and it was fabulous.
Best part is you can even freeze the naan's upto 2 weeks.

So if your wondering How to make easy naan bread at home? keep reading.
  

To make Home made Naan Bread
2 cups all purpose flour
2 tsp sugar
2 tsp salt
3 tsp yeast and some warm water
2 tsp oil
approx 1/2 cup warm milk,adjust more or less while you make it
2 tsp oil for adding to the bowl and brushing on top of the dough


For the Garlic Topping
Crush 2/3 garlic cloves along with coriander leaves and small piece green chili with some oil.

Now here's how to make the Naan Bread Dough
Mix yeast with the sugar and a little warm water and keep aside for 10/15 min till frothy.

Now mix in the flour and salt along with the yeast mixture,oil and knead adding warm milk little at a time till you get a semi soft dough.Make sure you knead it for 5/7 min so you get soft naan's.

Rub with oil on top of the dough and let it to rest so it doubles in a warm spot for 2 hours.

After 2 hours again knead for 2 min,then make dough balls and shape into a round or a pointed oval shape.
Rub the garlic mixture on top and allow to rest for another 1 hour.Make sure you cover it while it rests.


Feel free to try out the shape you want,i always stick to this shape



After 1 hour place the Naans on a foiled baking sheet and grill for 5/7 min at 240c.
If you want it crispy grill at 200c for 10/12 min.
Brush with butter before serving.
Now your done,serve them with any gravy or have them on their own,they are totally killer !
