"Easy Gobi Paratha Recipe"

serve with yogurt and pickle

i make these parathas in 2 ways,1 is grating the cauliflower adding spices and stuffing them raw and
the 2nd is cooking them on the pan then stuffing them..both are equally good..
for today's recipe
 i used
cauliflower cut fine
green chili
onion
cumin seeds
hing
salt
red chili
chaat masala
turmeric pwd
ajwain
chili flakes
ginger grated..saute all this then add the gobi and cook till dry..
allow to cool then stuff...

 TIP> make sure the stuffing and the dough ball is equal in proportion,by doing this you will get maximum flavour of the stuffing..in the below pic you can see how thin the top layer is,thats what we need !

Ohh my god these Homemade Chicken Puffs seriously blew me away,its scrumptious and they tasted store brought.I always wanted to try veggie and meat puffs at home and i'm so glad i did.

This recipe is also great for people who wonder What to do with Puff Pastry Sheets?
This one is a must try for sure...


perfect puffs,its a no fail recipe trust me !

Start by making white sauce,if your lazy and dont feel like get it from the store..and in case you cant do both,use cheese which is melted,it will still taste good dont worry !! 

now keep the white sauce away,let it get solid...

for the filling-
boiled chicken cut in cubes(add salt)
mix veg boiled with salt and pepper
pizza herbs 1 tsp
garlic pwd

Oke lets start !
saute the mix veg with the garlic pwd and pizza herbs for a min in olive oil,then toss the chicken in
cook for 2 min,till everything is well combined.

then cool for 10 min,now mix the white sauce with the chicken and veg..it must look thick and mushy
now its time to bake..preheat oven for 10 min on 200

take a pastry sheet and roll out a bit,place the filling in the middle and press the edges,you can make any shape you want,i just make the simple triangle shape...

brush with a mix of egg and water and bake on 200 for 25 min..and now your done !!
You will not miss going to the bakery to eat a puff again ..I wont !

Kerala Masala Curry (Kerala Style Potato And Peas)

This is a basic Masala Curry made in most Kerala Kitchens.The Masala Paste is what makes this dish get the most amazing flavour and i'm sure you will love it.

first we need to make a paste
saute corriander seeds,red chili,cumin,whole red chili..then add onion,ginger garlic,tomato salt..once you get a nice aroma,puree it adding very little water.
now in a sauce pan boil peas and potato cut in chunks,add in salt and turmeric and red chili pwd. boil till 80% cooked,then add in the paste and cook for 5 min,also add in some coconut milk(not to miss this)..cook for more 5 min..


After the curry starts boiling,its time for the tempering..

in oil,add mustard seeds,fenugreek seeds,curry leaf and hing..pour over the curry,boil another min.. and your done !!!
This curry tastes best if made a few hours ahead..so make it in the morning if your having it for lunch !!
This can be eaten with roti or rice..hope you like it !!



Chatpata Paneer Capsicum Sabzi | Shimla Mirch Paneer |

This is a take on the Chinese Chili Chicken called Paneer Jalfrezi ,only difference is there are  Indian spices added in to make it very chatpata(tangy-sweet) and something to relish with your rotis..your gona love it,try it for sure !

boil water adding red chili -salt and turmeric
pour over frozen paneer ..keep this away for now

chop tomato -capsicum in squares
1 onion
ginger/garlic and green chili paste
spices-chaat masala-red chili pwd-kalonji(onion seeds),cumin and hing
1 heaped tsp kitchen king masala

saute onion,tomato and capsicum adding the spices,add 1 tsp sugar and saute 5 min more

add 1 tbs kitchen king and cover for 5/7 min till the veg gets soft

add in 1 tsp chili garlic sauce( very imp in this dish,so dont skip it)
check for salt and add paneer..saute gently


finish off by adding 1 tsp cream..cover for 2/3 min before serving..now your done !

Puff Pastry Cheesy Garlic Sticks | Cheese Garlic Sticks with Puff Pastry

Great Recipe for Cheesy Garlic Sticks using Puff Pastry



This was a trial for cheesy garlic sticks,and they were perfect..Now i wont be nervous making a big batch next time...In case you all are wondering if i made the pastry sheet my self,ofcourse not,i just got the ready pastry sheet..Okie enough talking check out how i did it
 Remove the puff pastry sheet and thaw for half hr..then take a rolling pin and roll it out a bit..
once you roll it a bit longer,top with any flavouring of your choice
i used garlic and cheese powder..then fold and roll again so everything sticks
cut in strips and twist

use foil on the baking sheet and grease it
then beat 1 egg and 2/3 tbs water and coat the strips so they brown well
bake at 200 for 25 min

allow to cool completely


they were amazing,totally store brought !!!


Kerala Style Butter Milk (white moru curry)

Most of us South Indians have one common comfort food,curd-rice and pickle and it is something i'm sure we cant ever get over..
In case your have not tried a spicy version of the curd rice then give this recipe a try !!
As this is a buttermilk dish it has to be eaten in a bowl along with rice,lightly mashed with a spoon with papad on the side,its comfort food at its best !!!

Butter Milk is called Moru in Kerala,and usually it is made with a ground coconut paste.
This is another version without coconut and turmeric.
for the tempering
whole pepper corns
hing
roasted cumin and coriander pwd to taste
grated ginger

1 cup or more butter milk with salt added

saute all the spices for less than a min and add butter milk..shut off the flame immediately
Serve warm...
This can be eaten with rice or just sipped as a warm drink !!

Sesame Seeds And Coconut Chutney - Seasme Seeds Dip

I was so bored to make the usual chutney with medu vadas that i tried out this amazing new chutney recipe,saw it on a cooking show a few days back and i'm glad i did...

 Start by grinding coconut-green chili-ginger-salt,roasted sesame seeds,pinch sugar and a bit of yogurt,once thats done transfer to your serving bowl..
make a tempering of mustard seeds,curry leaf hing and 2/3 cashews(optional)
pour over the prepared chutney and relish it with any kind of vada !
If you want you can skip the coconut and only make Sesame Seeds Chutney in the same manner..Its really healthy and the nutty taste tastes amazing and is great as a dip !
do give it a try !

Rustick Bread which Never Fails | Rustick Homemade Bread Recipe

Oooo my god i cant believe i did it,I MADE BREAD YAYYYYYYYY...no kidding i  kissed it a few times before i cut the loaf,i was super excited...wish my mom was here to taste it.

This is the First Bread I Baked and i fell in love.I actually clicked 60 pics of the loaf.Damn i got happy !
I wish i could post all the pics,but that would be so boring for you all !

ohh ya woo hoo
  the recipe is really simple,any one can bake after this.
here goes
take 1/2 cup warm water + 2 tsp sugar + 1/2 tsp yeast-dissolve and allow to rest
let it get a bit frothy...takes 15 min..

in another bowl,take 2 cups self rising flour and i added garlic salt
you may leave it plain..if not adding any seasoning add salt..i skipped the salt

now mix in the flour mix with the yeast and water..be gentle..
allow to rest 1 hour,then knead again and rest another 1 hour,spread with olive oil..

use a loaf pan,i dont have a loaf pan(i know its crazy) so i just placed it on a baking tray
bake at 180o for 25 min
then ta daaaaaaaaaaaaaaa your done !

rustic looking right?

slice and enjoy with butter or cheese !!!!

Black Eyed Peas In Coconut Curry - Kerala Style Lentils In Coconut Gravy

To make South Indian Black Eyed Peas Curry,start by soaking the lentil for 4 hours or overnight ..then pressure cook with salt and turmeric till soft,make sure its not mushy.

for the Kerala Style Coconut Curry Paste
grind coconut with green chili,ginger,cumin and garlic to taste.make a smooth paste.

once your paste is done,add it to the pressure cooked lentil and boil for 5/7 min,if its thick add some water along with salt if needed..

Now for the tempering
mustard seeds,hing,curry leaf and half an onion..cook for a min then add it to the curry...cover with a lid for 10 min...After Covering for 10 min,serve!!!

Yummy with rice and yogurt !!
The kerala style coconut curry paste can be used for any lentil curry,it gives a creamy and rich texture to any dish,even for non veg gravys.The paste can also be stored in ice cubes and used when ever you want to dish up anything quick.

Quick Pumpkin Curry ~ Rasawala Kaddu

A simple yet very flavourful curry of pumpkin is great over steamed rice and perfect for lunch...
I always make chana and alu sabzi to go along with this curry,its a great combo..

chop pumpkin in squares
onion chopped
curry leaf
tempering-cumin,dried redi chili,hing,fenugreek seeds, mustard seeds,turmeric and coriander pwd..
ginger,garlic,green chili and tomato made into a paste-4 tsp
salt to taste

saute all the spices in ghee or oil,i used ghee
add in hing in the end
add in the pumpkin and saute,add salt to taste

add in the tomato-ginger/ garlic /green chili puree

saute for 2 min then add water and pressure cook for 1 whistle

after the pressure is gone,mash a tiny bit of pumkin and leave the rest whole
also check for salt ...
now your done !! serve with steamed rice and enjoy !
