Amaranth leaf is cooked as a sabzi,added to daal and also steamed and tossed in spices to make a hearty healthy dish..this recipe is a south indian way of cooking amaranth!
1 bunch amaranth chopped fine onion~garlic~green chili~curry leaf tempering-mustard seeds~chana daal~hing |
Lets cook
After tempering the spices,saute onion,garlic and green chili,do not brown the onions just wait for it to turn pink then add in the amaranth leaves...saute for 2 min then lower heat and cover for 5 min till well cooked..
all ready !!! |
garnish with grated coconut ! |
