Ribbon Pakoda Recipe (Quick and Easy Homemade Farsan)

Here is a fools proof recipe for ribbon pakoda or murukku.
 

To make homemade ribbon pakoda you need -
 
1 cup rice flour
1/2 cup gram flour
3 tbs oil made hot 
1 tsp hing
salt to taste
 
 
Grind with a tiny bit of water and strain
4 whole red chili
2 garlic pods
1/2 tsp fennel seeds

 
Heat the oil and add the hing, mix it with the gram flour and rice powder.
Add in the ground mixture and mix everything adding warm water. The dough must be smooth.

 
Make the dough into a cylindrical shape and add it into the ribbon pakoda maker.
Fry till golden and your done.
 
 
 
You can make different kinds of savoury and crispy homemade snacks to store by following the rice and gram flour proportion, all you need to do is change the flavourings.

Avacado Smoothie (Vietnamese Drink Recipe ) | Sin To Bo Recipe

I love smoothies and I'm always trying out new flavours as it is such a quick and delicious way to keep you full and happy !!
My favourite smoothie/shake before trying out this yummy avocado smoothie used to be strawberry banana and orange, but seriously after I got a taste of this rich and creamy smoothie I got hooked and guess what this is the 3rd time I'm making it in 2 weeks so so sooo good.
 
Somehow I never end up posting drink recipes but I just had to post  this mind blowing avocado shake/smoothie. The actual name of this drink is Sin To Bo and it is a very popular Vietnamese drink.
 
You can add soy milk if you want to skip diary and also skip the condensed milk and add honey, but I say try it just the way it is supposed to be made. What say?
 
Here's the yummy recipe you guys !
Oh ya ! 

 
All you need for 2 medium size glasses
A very ripe avocado
Sweetened condensed milk (more or less to your taste)
Ice 1 glass
Milk 1 glass
A tiny bit coconut milk (optional)
 
 
All you need to do is blend everything till smooth and creamy and you are done. You can add less milk if you want the smoothie to be thick.
 
                                  
There you go, so simple and totally sinful !

One Pot Meal (Steamed Chinese Chicken Rice )

Steamed Chinese chicken rice is packed with flavour and mostly made in a clay pot, hence the name clay pot chicken rice, but I do not have a clay pot so I cook this dish in a basic non stick pan.
           It still tastes amazing and so comforting, the best part is that this is an easy one pot meal.
One of our favourite weekend lunch.
 
Such amazing flavours in there ,you got to try it
 
 
You may use any vegetable, but these are what I like in this dish
beans ~ carrot, celery and spinach

1 cup jasmine rice - wash and drain the rice
medium ginger cut in thin large pieces
4 garlic clove slit in half

1 tsp coarse five spice powder
small pinch sugar
pepper and salt to taste
mix of soy and chili sauce
2 tsp chicken stock powder

1 cup boneless chicken
Marination for chicken (marinate 1 hour)
2 tsp soy sauce
1 tsp oyster sauce
1 tsp rice vinegar
some crushed chili
1/2 tsp sesame oil
a pinch sugar and salt

                                     
In a large pan or wok add some sesame oil and saute the marinated chicken. Cook for 3/5 min

 
 Add in the veggies, I add the spinach later. Saute well for2/3 min then add in the five spice powder.
 


Keep the heat to medium and now add in the salt and sugar, by now the chicken will be half cooked. Add the rice and saute for 5 min the rice gets well coated by doing this.
Make sure to not break the rice.
 Add in the sauces and saute another min, also add in the spinach.

 
I am using 1 cup of rice so I added 2 1/2 cups water , adding 2 1/2 cup water makes the rice a bit mushy, if you like the grains separate add in only 2 cups water.
 
Chinese pot rice tastes great when it is mushy and sticky.
 
For more flavour add in stock powder.
 
 
Wait for a boil and then immediately turn the heat to low and cover the pan with a tight lid.
Cook for 15/20 min and it will be ready !
 Now your done !

 
Serve with a fried egg on top, the aroma and flavours will get you hooked once you try this recipe for sure. Enjoy !!

Peanut Rice (Quick Indian Lunch Box Recipe) | Peanut Flavoured Rice for Lunch Box

Rice flavoured with crunchy peanuts is another common South Indian dish, very easy to prepare too.
I add a bit of yogurt for extra flavour and I mostly serve this rice with spicy potato sabzi so the yogurt balances the flavours perfectly.
 
You may carry this in your lunch box and it tastes great even with out re-heating. Just make sure you consume it within 6 hours.

 
For this simple Indian Lunch Box recipe you need

Cooked rice 2 cups
1/2 cup peanuts
1 tsp grated ginger
4/6 curry leaf
1 tsp crushed red chili
1 tsp mustard seeds
1/2 cup yogurt
1 tsp hing
2/3 tsp sesame oil
salt to taste

                
 
Add oil and crackle the mustard seeds, then saute the ginger,hing,curry leaf and the crushed red chili.
 
 Then add the crushed peanuts and saute till light brown .Add in salt and the yogurt, keep a very low flame as the yogurt can curdle.

Now add in he cooked rice and mix well.

It is done now, really simple I told you.

Yummy Breakfast Pita Sandwich | Turkey Ham and Egg Pita Pockets

Stuffed pita pockets are always a treat for breakfast, the filling ideas are endless, what only matters is the time you want to eat these so you can stuff them accordingly.
 
I had these yummy stuffed pita bread for breakfast and I used turkey ham,egg with some sautéed peppers and cheese. They were delish.
 
If you wish to make them a bit golden and toasted you can also use your oven, I just used a pan today and lightly toasted them to melt the cheese.
These breakfast pita sandwiches are really simple to make so do give them a try, you will love these quick and filling breakfast pita pockets for sure.
 
Here's the easy recipe !
A wonderful breakfast makes the day all the more better. 
 
you need
1 small green bell pepper cut in strips
1 small onion
1 egg
cheddar cheese 
turkey bacon
pita bread
crushed red chili
garlic powder
a pinch sugar
oregano 1/2 tsp
olive oil
salt and pepper to taste
 
Start by sautéing the onion and bell pepper till soft, add in the crushed chili oregano, salt pepper and a small pinch sugar. Keep it aside.

Cook the turkey ham till a light golden brown, I love it a bit crispy.

Also scramble the egg after you make the peppers and onions.
 

 
Time to stuff the pita breads, cut the bread in the middle and open them carefully.
Stuff the scrambled eggs, cheese slice, peppers and turkey ham.

 
Toast them on a non stick pan till the cheese is melted.

 
Now your done, eat them warm ! Good day you all !

Super Easy and Tasty Blue Berry Muffins

Hi you all, in the mood for blue berry muffins?? if yes then please do try out this recipe, it is a never fail muffin recipe and the aroma and flavour is outstanding.
Your entire house ends up smelling divine and then all you do is wait for these darlings to cool so you can eat them with jam or butter. Of course you can eat them on its own too.Yumm .
 
I made these a few times already and finally it is time to post this super easy blue berry muffin recipe.
Best part is it is one of those recipes which do not require too much mixing, never ever mix the batter too much if you want perfect muffins.
All you need is a bowl, a whisk and a spatula and your set.

A little warm, just how I like it for breakfast
 
1 egg
1/2 cup sugar
1/2 cup oil
2 tsp sour cream or yogurt
2/3rd  cup room temperature milk
2 cups self raising flour (self raising flour makes you get light muffins)
1 tsp vanilla
2 tsp orange or lemon zest (do not skip it)
1 cup fresh blue berry's
 
Topping (optional)
1 tbsp. brown sugar
1 /2 tbsp. butter
Mix the butter and sugar, you can add them on top of the batter for a crunchy topping
 
Lets start... 
To start make sure the egg,yogurt and milk are at room temperature ,follow this and you will have great results every time.
 
Beat the oil and sugar, then add in the well beaten egg .Mix till smooth and combined.
 
Now add in the sour cream,vanilla and orange zest, mix well again.
 
Now gently fold in the flour. Do not over mix the batter. Once the flour is mixed in just stop. Please..
 
Dust some flour on the blue berry, they will not sink to the bottom by doing this.
Now mix in the blue berry till combined, again remember to not over mix the batter.
Lumps are fine for this recipe.

Line a muffin tray with cups and equally pour it in, you can use an ice cream scoop for this
                       now sprinkle the topping over the batter,I added it on a few   
                      
 
                                                      Bake at 180 c for 25 to 30 min

 
Now it is ready !! Allow to cool a bit before serving..

Yummy Tuna Pasta Bake with Vegetables | Creamy Cheesy Tuna Veggie Bake

Here is a quick and yummy cheesy tuna casserole filled with veggies, coated in a creamy sauce and with a delicious crusty top. Serve it with a green salad or corn and dinner is ready in no time.
 
These kind of recipes are a great way to clear up any left over veggies before you go to stock up your fridge again.
You may also add any vegetable of your choice and make it along with chicken or entirely a veggie bake, my personal favourite is this simple tuna bake.
 
So for cheesy tuna and veggie bake you need...
 
 
                           
1 can tuna
1 cup mix veg of your choice (I used cauliflower, beans, peas and carrots)
1 onion chopped
2/4 cloves garlic chopped fine
1 tsp oregano
1tsp dried parsley
1 tsp Italian seasoning
 2 tsp chili flakes
1tbs whole wheat flour
1 1/2 cup milk
1 cup half cooked pasta of your choice
1/2 cup bread crumbs
1 tbsp. butter and olive oil
1 cup or more cheese (add more if you want it super cheesy)
salt and pepper to taste

                                    
Start by adding butter and olive in a pan and then add in the onion and chopped garlic.
Then add in the mix veg, saute for 2/5 min

Add in the whole wheat flour and saute for 2 more min on low heat, also add in the chili flakes,oregano and parsley and cook another  min.

 
Now add in the milk and stir, the flour helps the milk get thick and your creamy sauce is ready.
Add salt and pepper too,make sure to keep stirring to avoid any lumps.

                         
Time to add in the pasta and  the drained tuna,cook till everything is well coated with the sauce . You can add some cheese at this stage.
While this is cooking make the bread crumb mix, all you do is mix the bread crumbs with the cheese  some Italian seasoning. Keep it aside for later.

 
It is time to bake now, add the tuna and pasta in a baking dish and bake covered with foil for 15 min on 180 c.
After 15 min remove the foil and top with the bread crumb cheese mix as shown in the above pic and grill uncovered for 10 min on 200c, bake longer if you want it more crusty, but do keep an eye, you do not want to burn it.

 
It is ready now. See the crusty cheesy top?
 

 
 
I served it with boiled corn and mint lemonade. It was perfect !
