Hi you all, in the mood for blue berry muffins?? if yes then please do try out this recipe, it is a never fail muffin recipe and the aroma and flavour is outstanding.
Your entire house ends up smelling divine and then all you do is wait for these darlings to cool so you can eat them with jam or butter. Of course you can eat them on its own too.Yumm .
I made these a few times already and finally it is time to post this super easy blue berry muffin recipe.
Best part is it is one of those recipes which do not require too much mixing, never ever mix the batter too much if you want perfect muffins.
All you need is a bowl, a whisk and a spatula and your set.

A little warm, just how I like it for breakfast
1 egg
1/2 cup sugar
1/2 cup oil
2 tsp sour cream or yogurt
2/3rd cup room temperature milk
2 cups self raising flour (self raising flour makes you get light muffins)
1 tsp vanilla
2 tsp orange or lemon zest (do not skip it)
1 cup fresh blue berry's
Topping (optional)
1 tbsp. brown sugar
1 /2 tbsp. butter
Mix the butter and sugar, you can add them on top of the batter for a crunchy topping
Lets start...
To start make sure the egg,yogurt and milk are at room temperature ,follow this and you will have great results every time.
Beat the oil and sugar, then add in the well beaten egg .Mix till smooth and combined.
Now add in the sour cream,vanilla and orange zest, mix well again.
Now gently fold in the flour. Do not over mix the batter. Once the flour is mixed in just stop. Please..
Dust some flour on the blue berry, they will not sink to the bottom by doing this.
Now mix in the blue berry till combined, again remember to not over mix the batter.
Lumps are fine for this recipe.

Line a muffin tray with cups and equally pour it in, you can use an ice cream scoop for this
now sprinkle the topping over the batter,I added it on a few
Bake at 180 c for 25 to 30 min
Now it is ready !! Allow to cool a bit before serving..
