Kerala Thali Meal (Recipes for Kerala Festivals) | Kerala Platter

Finally this post gets out of my draft after a month,phewww...

Making a Kerala Style Thali Meal can be a piece of cake,only if you prep things before.

I made the paysam(kheer) and sambar a day before..
Also i soaked the pulse overnight so its ready to boil the next day.

The rest i made the same day, make sure to cook your rice in the morning so they stay perfect and fluffy for the assorted rice..

Few dishes in this Kerala Style Thali is also made during Onam and Vishu celebrations.

Jal-jeera Indian Mocktail | Homemade Jal-jeera | Indian Lemonade with Spices |

Most Indians prefer having a Jal-jeera along with their spicy meals,the sweet and spicy combo of Jal-jeera helps digest the food and keeps your tummy cool,all in all it is a really Awesome Mocktail to have.

It is Minty - Sweet - Salty with a hint of spice.Totally yum !

I had a friend visit me for lunch and i made this for her,when your girl friend is home you got to jazz up your glass so i made it look cute..and you all know i adore "cute".

Here's the recipe for a Indian Style Mocktail which is also served as a Drink Appetiser in most restaurants.

For Homemade Jal-jeera (restaurant style)
Start with the spice mix each 1 tsp each -
ginger pwd -cumin pwd -black salt -mint leaves -lime juice- mango pwd - salt -pinch sugar
      
 In a jar crush the mint leaves with the spices add water and chill in the fridge for an hour..
Before using strain it..

t.ip-plz chill before serving,it helps the drink get a great kick..

 Mocktails must have a great presentation too so jazz up your glass before serving..


dip the glass rims in water and then dip in a bowl with brown and white sugar..
See how pretty they look,as you take a sip of the spice water you get a sweet taste from the rims..
In Margaritas we rim with salt here we use sugar..So damn simple.


Indian Mocktails are full of wonderful flavours and they have an edgy taste.
If you wish to serve a unique drink appetiser then impress your guests with this drink.They will love it.

Masala Rawa Idli | Perfect Rawa Idli | Semolina Idly / Idli

Masala Rawa Idli Recipe

Rawa Idlis can be a tricky dish to make,if you have gone wrong making this in the past stick to this recipe.
This easy recipe will never fail you and you will have Perfect Rawa Idlis everytime.
  Its a no fail recipe and you will be very happy with the results...
                 Tip- to make this always use equal rawa and equal yogurt(well beaten,no lumps)

We need

Rawa 1 cup
Yogurt 1 cup
Salt to taste
Water a little bit
eno or fruit salt 2 tsp(add it only before steaming)
Tempering 1- urad daal,mustard seeds,curry leaf,hing,turmeric and green chili
Tempering 2 -carrot cut very fine - mustard seeds,urad daal and hing(any other veg can also be used)
Lets start cooking..
In a bowl mix the rawa and yogurt,then add in very little water and salt ,allow this to rest for 20 min,this step must not be missed if you want fluffy idlis..after 20 or 30 min separate the batter in 2 bowls if your making 2 different kinds..make the tempering and add the tempering 1 and 2 in the 2 bowls..now its time to add the eno or fruit salt..mix well and steam in a pressure cooker with out the lid..15 to 20 min is all you need..
Now your done..serve warm with any chutney...

Spice mix a pinch each

salt
chaat masala,if you cant find chaat masala no problem,it still tastes good...

Start by cutting the mango in half and make cuts into the fleshy part,now bring out the cut fleshy part out so they protrude out and the squares are visible...now all you do is sprinkle the spice mix on top and serve !

Peach Vanilla Icecream Pops | Peach and Kiwi Icecream Pops

You might think its so much easier to get some ready Kiwi or Peach icream but trust me after making this you wont regret the store brought iceream..A fun recipe and very yummy.
It is also a Kid Friendly Recipe.So make this with your darlings !

Get ready to melt some vanilla recipe and try this.

Start by keeping some vanilla icecream out on your counter till melted...
Then you chop some fruits,you can also puree them...i kept them in tiny bits..


i used kiwi and peaches..dont forget to peel them before you use them...

after chopping the fruits mix them in the melted vanilla icecream..make sure you put some fruits in the sides of the moulds..now freeze them for 4-6 hours...then your done !
its important you share this with some one you love..dont eat it all alone !

Chocolate Loaf / Cake (Eggless) | No Fail Eggless Chocolate Loaf (no fail) | Eggless / Butterless Loaf Cake

Best Recipe for Eggless Chocolate Loaf Cake

Err look at those 2 holes,I regret using a shaslik stick to check if the loaf was done..
A friend of mine sent me this easy recipe,loved the fact its egg less and butterless...

You can make 1 big loaf out of this,but i wanted 2 mini loafs for another recipe... 

 
For a healthy version use half cup all purpose white flour and half cup wheat flour.

Dry mix-
 1/2 cup all purpose flour + 1/2 cup wheat flour+ 1 tsp cornflour+1tsp salt
1/3 cup brown sugar + 2 tsp white sugar
 2 tsp cocoa(good quality please)
1/4 tsp baking pwd - 1/2 tsp baking pwd

Wet mix- Everything at room temperature
1 tsp vanilla + 1/3 cup yogurt+1/3 cup oil+ milk more or less to mix in the batter

1.Preheat oven to 180 then start by whisking yogurt and the sugars with vanilla,in another bowl sieve the dry mix 2 times...mix in the wet batter little at a time folding it in,then finally add in milk ...

2.If you pick up a spoonful, it should drop off the spoon in a goop while you count 1-2-3. ..If it takes longer than add a little more milk... now its ready to go in the loaf tin..

3.Spray with non stick spray and pour in the batter..tap 2/3 times and bake at 180 for 25/30 min..

t.i.p - do not open the oven until 20 min has passed..i promise you your loaf will be perfect so be patient and check only after 20 min ! Serve with ice cream or whipped cream !

Mexican Style Bean Rice | Mexican Rice with Beans

The Best Flavourful Mexican Bean Rice


   Its really easy to make this dish....prep a day before by soaking the beans and cook the rice...i used fava and kidney beans..best to soak them overnight..after soaking they bulge in size, boil or pressure cook them adding salt..,i pressure cook legumes and beans as it saves time ..

For the spices -
mexican seasoning - garlic - white onion - tomato roughly crushed - chicken(optional) - chili flakes - 1 pinch sugar - salt

To cook
Saute onion and garlic till pink,add in the mexican seasoning and saute for a min,now add in chicken and the drained beans saute for 2/3 min and add the tomato.

Add salt and 1 pinch sugar...cook covered for 5 min and then add in the cooked rice...coat the rice with the mix and add the chili flakes...

Its ready now ! before serving add some dried parsley...You will love it Chicas...





Batter Fried Fish in Garlic Butter | Garlic Butter Fish | Crispy Fish in Garlic Butter Sauce

Batter fried fish tossed in garlic butter is a must try for fish lovers,the taste is buttery with a bit of crunch from the coating and then the garlic and pepper makes the taste mouthwatering.
If it sounds so tempting imagine the taste.we loved it...

Try some today!!

 For this recipe

Use any white fish,wash it 2/3 times,cut in cubes or any way you like..
marinate with crushed garlic
pepper
salt and soy..
15 min is enough to marinate it!

Now for the batter - cornflour-salt-pepper-1 tsp flour,mix these with little water till smooth...
coat the fish and fry..when your frying these make the mix to toss the fish in..

For the Perfect Garlic Butter Sauce recipe
butter - garlic -coriander leaves - spring onions..chili flakes...
melt the butter and immediately add the garlic and saute..do not brown it..then add in the coriander and spring onions..1 tsp water and cook 1 min...toss the fish in and then your done ! serve with some lemon !!

Eggless Apple Cinnamon Cake | Apple Cinnamon Cake with No Egg | Begineers Egg-free Cake

I love tea cakes and i always wanted to give a simple Apple Cinnamon Cake a try,but then i used to be really scared when it came to baking,but not any more,cos i got a makeover.

I realised baking makes me super duper happy so i promised myself one cake a week...

This easy Eggless Apple Cinnamon Cake or Apple Cake is a cross between a crumble and a cake.
It is moist with a bit of a crumble texture and Totally Eggless.

And if you are some one who is looking out for Eggless Cake Baking Recipes then this recipe is for you.

Here is the recipe for Beginners Apple Cinnamon Cake (Eggless)

I used green apples for this..before you start preheat your oven to 180...
Then chop 1/2 an apple and coat with brown sugar and cinnamon ,allow to marinate till you start whisking the other stuff...

for the batter..
wet mix
1/3 cup yogurt make sure its room temperature
1/3 cup sugar ...more or less to your taste ,1 pinch salt
3 tbs oil or melted butter>whisk all of this for 5 min..

flour mix
1/2 cup flour+ 1/2 tsp baking soda+1/4 tsp baking pwd+cinnamon pwd 1 tsp ~ sieve these ..
2 times

~ we also need milk 1/3 cup or less...
in the end we need to add the other half of the apple to the batter..

apple mix
dust it with flour so it wont sink at the bottom which baking...

~ After you whisk the yogurt ,salt and sugar, fold in the sieved flour mix.now add in the milk..

The batter for this cake is not too wet
 Why add milk in the end for this cake batter?
 If you add in milk and the mix is runny you need to add in more flour etc and it gets really messy,you have more control over the batter if you add it in the end..not all at once..a little at a time..
            
>Okay,now back to the recipe, fold in the batter,and add the apple mix..do not over mix it..
if you over mix any cake batter it is the end of story,trust me..so be gentle..

 >Bake at 180 for 35 min,and check...make sure you do not open your oven before 30 min...or else your cake will shrink..just be brave and wait !! I was..

the texture was perfect..the apple topping was glazed...
and the aroma was amazing.

Traditional Lemon Rice | Kerala Lemon Rice Recipe

Making lemon rice is a great way to use your left over rice,not that you cant make it if you dont ..in case you cook the rice the same time the grains wont be fluffy and separate...so best if you use Left Over Rice..
This dish is tangy and smells really fresh..The perfect summer food,do give it a try !!

For lemon rice,you need left over rice...Basmati is what i use...

for the masala(use only ghee)

Start by tempering mustard seeds,urad daal,chana daal and cashews for a min...then add in grated ginger,curry leaf and green chili,you may also use whole red chilis for this..

Saute for 1/2 a min then add chopped onions,salt and hing..add in turmeric and 1 small pinch sugar(you need balance in everything) and saute again...now add in lemon juice,and add in the rice...

Gently toss and garnish with coriander...Now your done ! Serve warm with pickle and papad..

Fabulous lunch in no time...
