Best Recipe for Japanese Curry Made From Scratch | Homemade Japanese Curry Sauce

Finally a recipe for Japanese Curry, this one is special in my eyes as it is made from scratch without using the ready made curry roux available in supermarkets.

I tried a few recipes before this and you guys finally this one tasted just how I wanted with the right flavours and texture. Like all recipes anything homemade is always the best and im sure once you try this one, you will never get the ready made Japanese curry cubes again.

I made a simple fried drumstick to go with this dish instead of a chicken katsu and it tasted amazing with that extra crunchy coating and yummy curry on the side.

So for all you Japanese curry lovers like me here is the best ever recipe for Japanese Curry from Scratch made in your own kitchen without stabilizers and preservatives
Do make extra and store in ice cube trays for later use.


 I cannot promise you the exact aroma, flavour and texture if you skip any of the ingredient's listed.
Even skipping the wine will make a huge difference, all the ingredient's listed will make the curry taste exactly store brought and except you no one can tell it is homemade curry roux.

This recipe is the spicy Japanese curry version.

1 tsp garlic chopped very fine
1 tsp ginger chopped fine
1 chicken cube
2 tsp curry powder (spicy curry)
1 tsp red chili pwd (reduce the chili if you want it less spicy)
1/2 tsp garam masala
11/2 table spoon flour
1 small onion chopped
1 bay leaf
                                   
3 table spoon soy sauce
2 table spoon worcester sauce
2 table spoon ketchup
 
2 carrots chopped in medium size cubes
2 potatoes chopped in medium size cubes
2 table spoon red wine
 
 
Microwave the carrot and potato for 2 min
 

Step 1
 
 Start by adding 2 tbs any flavourless oil to a pan and sweat the onions adding salt.
After 2/3 min add the ginger and garlic paste. Cook on low for 5 min.

 Step 2
 
Once the onions and garlic turn a very light brown, add in all the powdered spices.
Saute on low heat for 2/3 min.
Make sure the spices don't burn. Saute continuously to cook the spices and remove the raw taste, this step is very important.
 

Step 3
After the spices and onion mix is well coated and cooked add in the flour, once again saute till the flour is well mixed in, this will take 2 min or so.
After 2 min add in about 2 cups water, add the water slowly so there are no flour lumps.

 
Step 4
Add in the chicken cube and red wine at this stage.
Stir so no lumps are formed.                    
Make sure the flour is well mixed in and the curry is lump free.

 
 Step 5
Add in the carrots, potatoes and bay leaf. Add in another cup of water and cook covered for 10 min.
If the curry is way too thick add more water.

 
 Check the curry after 10/15 min, stir well and you will notice it is got thick and a velvety texture.
Cover and cook a bit more if the veggies are not cooked.

 
 Last check for salt, I skipped the salt as the chicken cube is salty enough for me.
The carrot and potato must be soft but not mushy. Keep a close eye on that.

Now your done, plate up guys and serve with steamed rice.

 
 This curry will be a hit for the coming winter months im sure.

 
If you want to know how to store homemade Japanese Curry roux as cubes do this.
Follow the steps from 1 to 4.

Once you add the wine and chicken cube add in the bay leaf and bring to a boil.

Now cool it and add into ice trays, freeze and then store in a zip log for later use.
All you need to do is, boil water add the curry cubes, the veggies or meat and you have a quick curry ready. For a dark curry colour, brown the onions a bit more, really easy right?

No Fry No Bake Chinese Chicken Wings | To Die for Chinese Chicken Wings


These Chinese chicken wings are my absolute favourite as there is no frying or baking involved, with a handful of ingredients you get a sticky, sweet and salty dish which is better than any restaurant I promise you, I dare you guys to try the tastiest Chinese chicken wings ever in your home kitchen.
It is the bomb !
 
 
Try sticking to the steps shown for best results, if you alter the ingredients there will be big change in taste as it can get too sweet or way too salty.

This recipe is for 10 large chicken wings :

3 tbs brown sugar

1/3 cup water

1/2 cup soy

3 tbs oyster sauce

1/2 cup sherry or cooking wine (I used sherry)

3 tbs rice vinegar

2 red chili slit

1 large cinnamon stick

2 large star anise

1 medium ginger roughly cut

Mix all the ingredients listed above.

You also need
1 tbs sesame oil
spring onion for garnish
sesame seeds for garnish
10 large chicken wings

                                  
 
For this recipe use a big nonstick pan, start by adding the oil and then lightly brown the chicken wings, do it in batches or else they wont brown.
Half way through the browning add the ginger pieces.Do not cut it fine or grate it.

Saute on a low heat till the chicken gets a light brown colour, not too dark,.

 
Now add in the glaze and allow to boil once, when you see the mix is boiling cover with a lid and keep the flame on low, cook for 15 min.


 
After 10/ 15 min the mix will thicken, check in between and cover if the chicken is yet to cook.

Once the wings cook, saute again and  cook without the lid, it will continue to thicken and get a glossy finish.You can continue cooking if you want it more sticky.

Now your done, sprinkle with sesame seeds and spring onions and serve these wings hot. Yes hot !
 


Serve with veggie noodles or just plain rice. They taste better even the next day, only if your lucky to have left overs.

One Pot Meal (Steamed Chinese Chicken Rice )

Steamed Chinese chicken rice is packed with flavour and mostly made in a clay pot, hence the name clay pot chicken rice, but I do not have a clay pot so I cook this dish in a basic non stick pan.
           It still tastes amazing and so comforting, the best part is that this is an easy one pot meal.
One of our favourite weekend lunch.

You may use any vegetable, but these are what I like in this dish
beans ~ carrot, celery and spinach

1 cup jasmine rice - wash and drain the rice
medium ginger cut in thin large pieces
4 garlic clove slit in half

1 tsp coarse five spice powder
small pinch sugar
pepper and salt to taste
mix of soy and chili sauce
2 tsp chicken stock powder

1 cup boneless chicken
Marination for chicken (marinate 1 hour)
2 tsp soy sauce
1 tsp oyster sauce
1 tsp rice vinegar
some crushed chili
1/2 tsp sesame oil
a pinch sugar and salt

                                     
In a large pan or wok add some sesame oil and saute the marinated chicken. Cook for 3/5 min

 
 Add in the veggies, I add the spinach later. Saute well for2/3 min then add in the five spice powder.
 


Keep the heat to medium and now add in the salt and sugar, by now the chicken will be half cooked. Add the rice and saute for 5 min the rice gets well coated by doing this.
Make sure to not break the rice.
 Add in the sauces and saute another min, also add in the spinach.

 
I am using 1 cup of rice so I added 2 1/2 cups water , adding 2 1/2 cup water makes the rice a bit mushy, if you like the grains separate add in only 2 cups water.
 
Chinese pot rice tastes great when it is mushy and sticky.
 
For more flavour add in stock powder.
 
 
Wait for a boil and then immediately turn the heat to low and cover the pan with a tight lid.
Cook for 15/20 min and it will be ready !
 Now your done !

 
Serve with a fried egg on top, the aroma and flavours will get you hooked once you try this recipe for sure. Enjoy !!

Spicy Ramen Recipe | Homemade Spicy Ramen

If you ask me my cure for a runny nose or a cold I would only tell you two things, one is to try my clear chicken soup and second  this ramen noodle soup. Nothing else works for me.
 
I promise you all your sinuses will be cleared and you will feel better instantly after having a hot bowl of delicious ramen ,of course adding meat and veggies is completely your choice, for this recipe  I make it with assorted mix veggies and even skip the seasoning packet as I don't want the msg.
 
This is my way of making spicy ramen noodle soup, hope you try it out some day.
 
You need -
1 packet ramen of your choice
3 cups water
1/2 cup mix veggies
 low sodium chicken broth cube use 1/2 of it
1 tsp sesame oil
1 tsp onion powder
a pinch curry powder makes it get a good kick (optional)
1 tsp fine grated ginger
1 tsp minced garlic
dash of rice vinegar
1 tsp soy sauce
pinch sugar
1/2 tsp pepper
2 tsp sweet chili oil
you may add salt if needed, I fell the chicken broth cube is salty enough for me
 
In a soup pan add in the sesame oil and the garlic and ginger, quickly add in the mix veg and saute for a min, add in the curry powder too.
Now add in the 3 cups water and chicken broth cube. Boil for 2 min.
 
After 2/3 min add in the sugar, onion seasoning,vinegar, soy, pepper and sweet chili oil.
Keep boiling the soup for 5 min.
 
Now add in the ramen and cook till noodles are soft, check for seasoning and add more sauces to your liking if needed.
 
Its ready now, you can also garnish with spring onions for some extra flavour.

Stir Fried Sausage and Mushroom Noodles | Sausage and Mushroom Stir Fry

Have this as a snack, for lunch or dinner,and it keeps you feeling happy and full !!
Very simple to make too so do give  it a try !

Here's the recipe !

Boil any flavourd noodles of your choice.


in a pan saute chopped mushroom,bellpepper and sausage along with pepper..
I used turkey sausage,you can use any kind of your choice.

Saute for 5 min till everything is cooked,then add plum sauce-soy-vinegar and 1 tsp sugar + salt.

Sprinkle some water so everything is combined together.
Now add the noodles and toss..cover with a lid for 2 min..after 2 min shut off the flame and garnish with spring onions...its ready now.
do not over cook the mix

I saw this yummy Batter Coated Sausage recipe on a you tube channel and couldn't wait to try it,so quick and easy,very tasty too..

for the fried rice
rice
soy to taste
rice vinegar
salt
pepper
spring onions
egg
garlic
saute garlic,then add beaten egg and mix in,cook it then add rice and soy along with vinegar
add salt, pepper ,sugar and garnish with spring onions..


now for the coated sausage recipe
you need
any sausage of your choice,i used turkey
cut then dust it with  flour


now dip in egg

cook till brown on both sides,you can use the left over egg to make the fried rice

How To Make Chilli Potato - Indo Chinese Recipe

When i eat this dish i dont miss chili chicken,so i usually make this dish on tuesdays when we give non veg food a miss !! this recipe is almost the original recipe so do give it a try ! Your gona love it for sure !

it tastes great in gravy form too
just add in 1/2 cup water and then a mix of cornflour and little water,pour and bring to a boil !
check for salt and add some soy
Gravy is ready !

Chicken Spring Roll - Chicken Egg Roll

This is the simpler version of a chinese spring roll recipe,it has no cabbage,no bean sprouts and no chili sauce in it...
I make these with only a few things added ,just for a change and it tastes wonderful !
so crispy and light

mmmmmm

chicken cut in small bits
spring onion
capsicum
soy
green chili
garlic
sugar
salt

saute everything till chicken is cooked

add soy and corn flour mixed with water
the corn flour makes the mix sticky,thats what we want

roll out the spring roll pastry

fry on medium heat


serve with sweet chili sauce
