Dark Chocolate Peanut Butter Cups | Quick No Bake Dessert

Here is an easy no bake dessert recipe for days when you need that chocolate fix, what makes this more naughty is the creamy butery peanut butter center.
It's a true match in my eyes as the bitter chocolate mixed with sugar and butter gives you a unique decedant taste which milk chocolate does not bring out.

Try it out if you also love and can't get enough of the Reese's peanut butter cups, I promise you this one is all the more yummy,  you already know anything homemade is best right?

Here's what you need for 6 mini silicon moulds
(use more or less sugar to suit your taste)

1 bar of dark chocolate + 1 tsp salted butter
1/2 cup of creamy peanut butter + 2 tsp salted butter
2 tbs sugar for chocolate mix
1 tbs sugar for the peanut butter mix

Start by melting the chocolate, butter and sugar on a double broiler or microwave.

If using the microwave method please do it in intervals, if you use it on full power for more than 40 seconds at a stretch there are chances the chocolate will burn and that will not be a pretty sight.

Be patient and use it for 40 seconds, stir then again run for 40 seconds. Every microwave is different so heat it for more or less time keeping a close eye on it.

Next mix in the sugar, butter and peanut butter, place in a pan filled with hot water to melt the mix and make it more smooth. Mix really well, it must look creamy and smooth.

Now all you do is fill the cup with the chocolate mix, keep in the freezer for 5 min.

After 5 min top with the peanut butter mix, chill for another 5 min.

Last top with the chocolate mix, chill for few hrs and then remove from the moulds.

I never use silicon moulds for baking, but they are extremely handy for recipes like these.

Hope you enjoy these treats, I loved them so much that i shared just one with hubby and ate the rest.

Frozen Fruit Sandwich (guiltfree icecream) | 3 Ingredient Dessert Recipe

Try these tasty 3 ingredient frozen fruit sandwich instead of ice cream or for those days when you crave something sweet, banana is the base for this recipe, adding any other fruit puree or  berries of your choice is completely up to you.
I love how this recipe has no sugar too, this is totally guilt free and gets ready in no time. Try it asap!

Makes 6 sandwiches :
2 large bananas
1/2 cup blue berries
honey gram crackers

Cut the bananas and lay them on a plate, freeze them for 20 min.

Crush them, you can see how the texture gets in 2 crushes, yumm already !

This is how it will look after 4/5 crushes in your blender, they are getting a creamy ice-cream like texture.

Crush 2/3 times more and then you will get a smooth creamy texture just like ice-cream, but this one is without sugar, cream or milk, how cool is that guys ?
Add in the blue berries and crush till they get blended in. Now stop and work quickly.

Line a square or rectangle baking pan with foil and spread the mixture.

Cover it with foil and freeze for 2 hours.

I love honey gram crackers but of course you can use any flavour of your choice.

With the help of your gram cracker cut portions, work quickly so it wont melt.

Now all you do is assemble your frozen fruit sandwich.

Wrap them individually and freeze for later use.

Eat away, they are so yummy ! 3 ingredients are all you need for a healthy everyday dessert.

Sweet Vermicelli Recipe for Eid | Eid Desserts

Sweet roasted vermicelli is a delicious sweet dish made mostly during Eid, there are many ways to prepare this dessert but I prefer this vermicelli very soft instead of separate.
There are also different toppings that you can add and the common ones are mawa/ khoya, dry coconut and silver foil.

So here the recipe for a quick Eid dessert.

1 cup fine vermicelli
1 cup sugar (add more or less to your taste)
1 tbs ghee
1 tsp cardamom powder
1/4 cup chopped dry fruits
2 cups water
1/2 tsp rose water
Silver foil for decoration

Start by adding the ghee to a nonstick pan and brown the vermicelli on a very low heat, make sure it does not burn. Once its brown remove it with a slotted spoon so there is ghee left in the pan.
Keep it on a plate to cool for 5 min.

In the same pan fry the dry fruits and then add in 2 cups water along with the cardamom powder.
Once the water is about to boil add in the brown vermicelli and the sugar, cook on a medium heat and cover for 2 min if you want it a bit soft a slightly mushy.

If you want the vermicelli to be separate do not keep the heat on low and allow to cook without a lid, once the sugar dissolves and the water has dried your dish is ready.

It is best of you remove it from the heat and place the vermicelli on a plate for 2/3 min before serving. Most of the time there is a tendency for vermicelli to get very mushy if kept in the same pan.

Decorate with silver foil and then your done !

Eggless Tiramisu (step by step tiramisu recipe)

Making eggless tiramisu is what I always prefer as I feel it is much safer even for people with allergies and also for those who do not eat eggs, you must must must try out this easy recipe and I know for sure you will be making it very often after you get a taste of it.

It is my favourite dessert and no one can make Tiramisu better than my sister, it seriously tastes better than any restaurant, no jokes !

Here is her no fail tiramisu recipe !

All you need is :

Italian lady fingers (not the sponge cake)

Strong coffee 3 cups (I make a little extra in case I need more)

2/4 tsp or more rum

Heavy Whipping cream, keep it cool in the fridge

Mascarpone cheese 1 regular pack

Less than 1/2 cup super fine sugar

Good quality cocoa powder for dusting

Make sure your coffee is strong, cool it completely and add in rum.

Whip the cream adding half the sugar and then cool it in the fridge.

Cream the mascarpone cheese with remaining sugar and add in half of the whipped cream, mix well.
Do not over mix.

Add in the rest of the whipped cream and combine, over mixing will not give you a light airy texture so be very gentle.

Dip each lady finger into the coffee and rum mixture then line into a rectangle baking tray, it is much easy to remove if your tray is a square or rectangle shape.

Spread the top with the cream mixture, then again top it with another layer of soaked lady finger and spread with the cream mixture.
You can make 2/3 layers. We made just 2 layers.

Once you finished making the layers, dust with the best quality cocoa you have.
Then cover with cling wrap and chill for 6/8 hrs.

Now your done, just cut and serve.

Shahi Tukre / Tukda (super yum Indian dessert)

Here is my way of making sinful shahi tukre. Hope you try it out guys !

My way of making shahi tukre is a bit different, I just avoid soaking the fried bread slices in the reduced milk mixture ,the bread stays a bit crispy and soft in some places and some how I like the texture when it does not get mushy.
Of course you can try both ways and see what you like !

Here's what you need for 4 slices :

2 cups full fat milk
1 tsp rose water
1/2 cup sugar or more to your taste
4 slices bread
Ghee for frying the bread
Finely cut almond and pistachios
Silver foil to decorate

There are 3 steps to make Shahi Tukre
Step 1 - Making the reduced milk or rabri
Start by boiling the milk on very low heat till the milk is reduced, use a saute pan and not a sauce pan for this. Adding a tsp of ghee before adding the milk helps coat the pan and the reduced milk wont stick at bottom.

Once the milk if reduced to half add the sugar, cardamom powder and the rose water.
Cook till thick and creamy for more 5/7 min or leave it in to a thick pouring constancy.
Keep covered until you use it.

Step 2 - Frying the bread
Now trim the bread from all four sides. You can cut them in squares or in a triangle shape.
If you are planning to serve them for a large group of people you can also cut the half cut triangle into mini triangles, they look so much cuter like that.

After trimming and cutting the bread slices fry them in ghee, I would suggest you stick to ghee and not oil for best results.

Fry till golden brown.

Step 3 - Assembling everything
Allow the bread to cool for 2/3 then spread the milk rabri on top.
If you want the bread to soaked then simply arrange the fried bread in a serving dish then pour the milk mixture on top and garnish with dry fruits and silver foil.
Chill a bit before serving.

Another way of making it is by adding condensed milk instead of sugar and also by dipping the fried bread slices in sugar syrup then pouring the rabdi on top. Both ways are equally delicious.

So if you have never tried this sinful Indian dessert try making it soon, you will love it.

Yummy homemade Shahi Tukre is ready to serve! Enjoy guys !
