Chicken Taco Platter (mexican night recipe idea)

Here is a simple Mexican Taco Platter which I love making when friends come over, I prefer making this along with a veggie bake as main course and a fruit platter to end the meal.
These kind of platters are great as guests can add their own choice of toppings and try different combinations ,also make sure you have have Salsa and some sour cream corn for additional toppings.


You need:
2 large chicken breasts
1 onion
4/5 garlic cloves
1 sachet mild taco seasoning
1 can organic pasta sauce, yes you can add taco sauce
sour cream
boiled corn
pepper / salt to taste
toasted taco shells

The first step before making this homemade Mexican taco platter is making the Salsa and Sour Cream Corn. Follow the recipe of the sour cream corn and in the end all you do is mix in sour cream to finish it off.

You can make these and store them for later.

For the chicken :
Start by boiling the chicken breast after chopping them roughly,  boil for 10 min with salt, 2 garlic cloves and paprika .It is best to cover it while boiling.
After 10 min drain and reserve the water, now shred the chicken.
Add some olive oil in a pan and saute the onion and chopped garlic.
Now add the shredded chicken and the pasta sauce, salt and pepper.
Also add in 1 cup water. Cook all this for 20/30  min on low heat.

This is what the chicken will look after 20 min, the texture will be soft and the sauce will be well mixed into the shredded chicken pieces.

It is time to get the platter ready once the chicken is cooked. 
All you do is toast the taco shells and arrange them on a platter.
Serve with sour cream corn, salsa and the chicken with lots of lemon on the side.
Now your done !

You know me I love piling on my tacos, yes I end up using a box full of tissues while eating these, but I love the fun aspect so I don't mind.
